If they have a URI (kitty cold), their noses are clogged up. They can't smell the food, and that's why they don't eat it. This is very common in shelter cats - it's contagious, and they pass it to each other.
Take them to the vet asap. Not eating can lead to all kinds of problems - besides the obvious malnutrition, it can also cause fatty liver disease. Colds are relatively easy to clear up, so don't wait till it turns into something worse!
Also ask the shelter exactly what they were fed there. Then give them that type of food at first, and slowly transition them to what you want to feed. (Choose a high-quality brand,)

I think they won't eat because they can't smell the food. Cats really depend on smell for most of the things they do. Not eating is also an immediate problem with cats, when they stop eating there is usually a BIG problem. That is the last thing that will stop with a sick cat. My adorable "Jeffrey" is a 3 yr old orange tabby. I got him as a feral kitten when he was 6 months old. He went behind a fridge and stayed there for 3 days. Didn't use the litter box, didn't eat. Then he began to eat and use the box, but I didn't see him for 3 weeks. Now he is now best friend and my adorable boy. I think you need to take your cats to the vet. I think there is a problem. Cats need time to adjust to new home and will eat when hungry. Try to put out food at same time each day. Everybody says canned (wet) food is better. Call vet and ask about sickness. Try some fat-free milk too. Good luck!

shelter food is usually donated by a vets office and is of high quality so that is not why they are not eating, they sound like they have upper respitory infections and they need antibiotics, they will only get worse if you don't get them to a vet, when they don't feel good they won't eat., Imagine if you had the flu and you ached all over, well that is probably how they feel ....

It's easier if you go see the vet, then to buy various types of food for your cats. The vet would probly give a special treatment for your cats.

If they have a runny nose you need to take them to a vet.
That is not normal. It may be the reason that they are not eating.

Yes, it could be that they aren't feeling well. But just have food available for them, they will eat when they are hungry enough, they could just be being picky
