Does anyone have a recipe for authentic spanish rice that is EASY to make. Also, what about one using minute rice??

Veronica's Easy Spanish Rice:

45 min 5 min prep
6 servings 6 cups

1 cup uncooked rice
1 medium onion, chopped (I like onions so I used a large one)
2 tablespoons vegetable oil (I used olive oil)
2 1/2 cups water
1 (8 ounce) can tomato sauce
1 small green bell pepper, chopped
1 1/2 teaspoons salt
3/4 teaspoon chili powder
1/8 teaspoon garlic powder

1. In a large skillet, heat the oil over medium heat.
2. Add rice and onion and cook (about 5-10 minutes) stirring occasionally, until rice is golden brown and onion is tender.
3. Stir in remaining ingredients and bring to a boil.
4. Reduce heat, cover and simmer for about 30 minutes, stirring occasionally, until rice is tender.

I have a pretty simple recipe but I don't do exact measurements other than on the rice and broth, but its super simple.

First heat some canola oil in a nice size frying pan (or any light oil, not olive though) enough to coat the pan (about twice around) Than add in about a cup of rice ( i use uncle bens or riceland) and cook until you see the rice start turning a light brown. Some parts might bee dark brown and thats okay as long as you don't burn the rice. Than add in 2 cups of chicken broth and 1/2 cup of water.

For the seasonings, add black pepper, red chili powder, garlic powder, cumin (about palm full of each, 2 on the cumin) and 1/2 tomato bouillon cube. Stir all ingredients and add about 2-3 tablespoons of tomato sauce. Stir and bring to a boil, once it reaches a boil cover the rice lower heat and let it cookr for about 15-20 minutes. It is important once you cover to leave it alone and do not uncover. Check on it after about 15 minutes and if all the liquid has dissolved you can fluff the rice with a fork, shut the gas off and place the cover back on. The rice will continue to cook for about 10 more minutes. Fluff with fork again and enjoy!!

Spanish Rice
2 tablespoons olive oil (can use up to 1/4 cup)
1 onion, chopped fine
1 garlic clove, minced
2 cups of medium or long-grain white rice
4 cups chicken stock (or vegetable stock if vegetarian)
1 heaping tablespoon tomato paste or 1 cup of diced fresh or cooked tomatoes, strained
Pinch of oregano
1 teaspoon salt

In a large skillet brown rice in olive oil, medium/high heat. Add onion and garlic. Cook onion rice mixture, stirring frequently, about 4 minutes, or until onions are softened.

In a separate sauce pan bring stock to a simmer. Add tomato sauce, oregano, and salt. Add rice to broth. Bring to a simmer. Cover. Lower heat and cook 15-25 minutes, depending on the type of rice and the instructions on the rice package. Turn off heat and let sit for 5 minutes.

Serves 4 to 6.

Spanish Rice..

4 slices bacon cut in small pieces
1 2/3 cups water
2/3 cup long grain rice uncooked
1/2 cup onion chopped
1 1/2 teaspoons chili powder
1/2 teaspoon salt
1/2 teaspoon sugar
1/2 teaspoon paprika
1 8-ounce can stewed tomatoes
2 tablespoons tomato paste (optional)
parsley Chopped



Directions:
In a 2-quart saucepan over medium-high heat, fry bacon until crisp. Drain bacon on paper towels; set aside. Discard all but 2 tablespoons of the drippings. To saucepan, add water, rice, onion, chili powder, salt, sugar and paprika. Stir and bring to a boil; reduce heat to low, cover and simmer for 20 minutes or until rice is done. Stir in stewed tomatoes with juice, tomato paste and half of the reserved bacon, chopping up tomatoes with a spoon. Cook until heated through. Spoon rice into a heated serving dish. Sprinkle with remaining bacon and parsley.


I use this one.. but i cook the rice (minute) last and just add to it..leave it sit for about a half hour.. mmmm i love mexican food..i live in southwest US and we have the best......

incredibly delicious but EASY Spanish rice

INGREDIENTS
2 tablespoons oil
2 tablespoons chopped onion
1 1/2 cups uncooked white rice
2 cups chicken broth
1 cup chunky salsa

DIRECTIONS
Heat oil in a large, heavy skillet over medium heat. Stir in onion, and cook until tender, about 5 minutes.
Mix rice into skillet, stirring often. When rice begins to brown, stir in chicken broth and salsa. Reduce heat, cover and simmer 20 minutes, until liquid has been absorbed.

This one is EVEN easier because it calls for instant rice but its still really good!! Perfect for when you are short on time but still want a GOOD DINNER!

(20 ounce) jar mild salsa
1 cup water
1 tablespoon butter
1 cup instant rice

Bring water to a boil.
Add butter and jar of salsa and bring almost to a boil.
Add rice and remove from heat and let stand covered per instructions on instant rice box.
That's it!
You can substitute with mild salsa but it makes it sort of sweet instead of a spicy taste to it.

2 onions, diced
1 cup uncooked white rice
2 tomatoes, diced
2 green bell peppers, diced
1/2 teaspoon chili powder
1/2 teaspoon salt and pepper to taste
1 (10 ounce) can sliced black olives, drained (optional)
1 (10 ounce) can whole kernel corn, drained (optional)
DIRECTIONS
In a small saucepan over medium heat, combine chicken broth and tomato sauce. Bring to a boil while cooking the following.
In a large skillet over medium heat, cook bacon until evenly brown. Chop bacon, and set aside, reserving the bacon fat. Add onion to skillet, and saute until tender. Stir in rice, and cook until lightly browned, 3 to 5 minutes. Pour in boiling chicken broth and tomato sauce. Add diced tomatoes, green peppers, and chopped bacon. Season with chili powder, salt, and pepper. Cover, and simmer for 30 to 40 minutes. Stir in black olives and corn.

fry rice till lightly browned
add tomatoe sauce and anykind of spices u want
bring to boil
cover till cooked
remember steam cooks rice so try not to open once covered
