I have also wondered about that. I have never seen anything in the Bible about folding hands to pray. There is a place where it says lift up your hands.

Usually it's those that get so caught up in the religion of things; the "right" way of things instead of just talking to God, or being what God wants them to be; being obedient to God and treating others like Christ - they're the ones who get into trouble. There is no "right" way to put your hands when you pray, and if it were, the Bible would say so.

for many it is a sign of respect. A sign of submission and "restful trust." I personally don't but I don't have a problem with those who do. I tend to walk when I pray and gesture with my hands alot (especially if doing spiritual warfare in prayer). There are many "ways" to pray, just as long as you do it.

I guess it helps to concentrate on the prayer rather than fiddling around with stuff. It adds a bit of formality to it for people who like formality - I prefer to just talk to God rather than making it all formal, but some people like the formal and "proper" way. I don't think it's biblical though.

I was always told they do that to focus, but peronally, I think it's a rip off of Kijuri Kuri, an eastern practice of finger positions that alter the flow of chi in the body to achieve certain results. alot of "christian" practices are rip offs of something else.
