In any food, if something has even the tiniest hint of bitterness to it, that bitterness explodes across my tongue and I nearly gag. That's why I can't stand dark chocolate or sharp cheese--it's so bitter! When I bake something, I have to cut the cocoa powder by more than half so I can tolerate the bitterness when it's done.

How can you negate that bitter flavor?

Adding sugar is a common way to cut the bitterness-- you can add other flavors (like extracts) that will mask the bitterness. If you are cooking, olive oil seems to bring out the bitterness of many foods (like spinach).

I get rid of bitter flavors of carrot juice and steamed spinach or swiss chard with the addition of lemon juice.

add a little salt, it wil bring out the sweet and cut the bitter.
