Here is a really easy recipe from a Campbell's soup can:

l can Campbell's cream of chicken soup
1 1/3 cups water 3/4 cup uncooked long grain white rice
2 cups fresh of frozen vegetable
1/2 tsp. onion powder
4 skinless, boneless chicken breast halves
1/2 cup shredded cheddar cheese
Stir all the ingredients (except chicken) together and place in 12" x 8" baking dish.
Place the chicken on top of the mixture. salt/pepper as desired. Cover.
Bake at 375 degrees for 45 min. or until done
Top with cheese.
**I substituted finely chopped, fresh onion instead of onion powder. And I am partial to broccoli, peas, and /or carrots. Anyway, it is simple and makes a complete meal.

A very simple way is to put chicken pieces in a casserole dish, cover with water with about a teaspoon of salt stirred into it, put it in the oven, set the oven for 350F/180C, take it out after 90 minutes. Remove the chicken pieces, take the skin off and any fat you can see (use an ordinary knife and fork), and if you want, separate the bones from the meat. Put the chicken away in the refrigerator in a covered dish overnight if you want better flavor, then reheat gently in the microwave when needed, or serve cold. You can sprinkle on some seasoned salt when you eat it.

You can bake it w/o oil, however I would suggest covering it in a sauce (like BBQ,) or marinating it (in something like italian dressing works wonders. You can also substitute butter for oil if cooking in a pan. There is also the grilling option. There are a ton of recipes for chicken (w/o oil) I have attached a page below. (you can also you a have/don't have ingerdient search.)

Grill it. Serve cut at a diagonal angle over salad and top with some sort of fruit, preferably strawberries or mandarin oranges. You don't even need the salad dressing, and it's healthy - use salad dressing if you don't NEED to avoid oil.

Or cook it in the oven with some spices and lemon juice or spagetti sauce. You can also cook it on the stove top in some soysauce, teryaki sauce or something similar.

Bake it of course..but if you like it crispy, like fried do this:
Depending on how many pieces you want to fix..I guess on all my stuff...but put half flour half corn meal..salt, pepper in a bag..dip chicken in beaten egg mixture and put in bag and shake good to coat...lay chicken in a oven safe dish with butter on bottom..doesn't have to be much..just enuf to coat good...and bake..turning about every 20 mins. for evenness..This next one might not sound great but is YUMMY...marinate chicken in ranch dressing overnight...roll in dry bread crumbs with seasonings and bake........GREAT

Boil it, make chicken stew. Don't forget to skim out the extra fat and bones!
