The best and healthiest cooking oils are the ones that are cold or expeller pressed. Canola, Safflower, Sunflower are excellent. Olive oil is also good but it will smoke sooner at high temperature. If the label doesn't specify cold/expeller pressed it means that the oil has been extracted using a solvent and has been heated once. Avoid them if you have a choice.

Olive oil is good for you because it is a monounsaturated fat. This means that it is an HDL (High Density Lipid), which is the good cholesterol. It gets rid of the LDLs (Low Density Lipids) which are the artery clogging cholesterols. When reading labels, watch out for fats that are polyunsaturated, those are the LDLs.

All cooking oils are liquid fat. Vegetable oils are better than animal fats. Olive oil, and canola oil are better for you than others.

Extra Virgin Olive Oil is supposed to be good for you because of the Monosaturated Fat, which is the good fat.

The ones that have saffron in the oil is very good for you.
I use a corn-oil for deep frying.
I use crisco-oil for baked goods.
