When I was a little girl, my mom made a dish on the stove, I think the fish she used was sole and she made a white sauce with the fish in it and she put in fresh parsley. I'm trying to find out what kind of sauce it was, I know she put milk to help make the sauce but that's about all I know. Help! Thanks.

Gently poach the fish in milk until cooked, remove to a bowl and plate.
Make a roux using the milk and return fish to pan as fillets or flaked. Reheat and add parsley.
If it was sole it would have to have been slightly undercooked or it would have fallen apart at stage one

i don't know what the recipe for that might be but you could check better homes or betty crocker online. also, knorr makes a package white sauce mix that is very good. you can add most anything to it to get the desired taste. i've added parsley and dill and used it on fish. very good.

i make a white mornay sauce.i cook fish separately.then i use 1/2 and 1/2 in a pan warm slowly as not to scorch it add approx.2-3 Tbs. of chicken base and parmesean cheeseto your taste.pepper,parselymaybe a little garlic powder.then i thicken it like i do with gravy with flour and water.don't boil very long it will scorch.pour over cooked fish. yummy for me and simple hope u try it and enjoy!

If she used whipping crem and it was a thick sauce, it might have been the french Bechamel sauce which is every fine chef's staple sauce upon which other sauces can evolve.
