How much percentage of cocoa do you prefer, and what is the difference between them other then the cocoa percentage? I know there are 70%, 85%, and 99%. Then there are the the Cuba 55%, Madagascar 65%, and Equador 75%

As a former chef, it all depends on what your using it for or if your just eating it, the higher cocoa solids like 80-85% are o.k for eating but very intense, they make better chocolate mousse, sauces, hot chocolate and in other cooked foods.

I never use one type, I generally add a touch of milk chocolate or a lighter dark based one. If it is to strong you don't really enjoy the flavour, it is like to much sugar or alcohol in food, it masks the real flavour.

I like the chocolate mint Lindt,I'm not sure how much cocoa is in it.

My favorite is the extra dark chocolate truffles which are 60%

I prefer any kind of Lindt choc. mostly the White choc* YuMmMm
