It's spinach leaves. Can I even cook that? How do I prepare it?

Here are some recipes I make using spinach.

Creamed Spinach with Jalapenos

INGREDIENTS
1 (10 ounce) package frozen spinach
1/4 cup butter, divided
1/4 cup bread crumbs
1 tablespoon all-purpose flour
2 tablespoons minced onion
1 clove garlic, pressed
1/4 cup fat-free evaporated milk
2/3 cup shredded pepperjack cheese
1 fresh jalapeno pepper, minced
1/2 teaspoon celery salt
ground black pepper to taste
DIRECTIONS
Preheat oven to 300 degrees F (150 degrees C). Butter a small casserole dish.
Place the spinach in a microwave-safe bowl, and cook in the microwave 5 minutes on High, until heated through. Drain, reserving 1/2 cup liquid.
Melt 2 tablespoons butter in a small saucepan over medium heat, and stir in the bread crumbs until coated. Remove from heat, and set aside.
Melt remaining 2 tablespoons butter in a medium saucepan over medium heat. Stir in flour. Mix in onion and garlic, and cook 1 minute. Gradually stir in reserved spinach liquid, evaporated milk, cheese, and jalapeno. Season with celery salt and pepper. Mix in the spinach. Transfer to the prepared casserole dish, and top with bread crumbs.
Bake 45 minutes in the preheated oven, until bubbly and lightly browned.







Spinach Pancakes

INGREDIENTS
4 tablespoons all-purpose flour
2 eggs
1 (10 ounce) package frozen spinach, thawed and drained
salt and pepper to taste
1/2 teaspoon paprika
2 tablespoons olive oil
DIRECTIONS
In a medium bowl, mix together flour and eggs. Stir in spinach, and season with salt and pepper to taste and paprika.
Heat olive oil in a large skillet. Drop spinach mixture into the oil by the spoonful, and flatten into patties. Cook until browned on both sides. Remove to paper towels to drain. Serve warm.







Spinach Pecan Bake

INGREDIENTS
1 medium onion, finely chopped
1/4 cup butter or margarine
3 (10 ounce) packages frozen spinach, thawed and drained
1/2 cup half-and-half cream
1/2 cup coarsely chopped pecans
1/3 cup dry bread crumbs
1 teaspoon salt
1/2 teaspoon ground nutmeg
1/8 teaspoon pepper
TOPPING:
1/4 cup dry bread crumbs
2 tablespoons butter or margarine, melted
DIRECTIONS
In a skillet, saute onion in butter until tender. In a large bowl, combine onion, spinach, cream, pecans, bread crumbs, salt, nutmeg and pepper; mix well. Transfer to a greased 1-1/2-qt. baking dish. Combine topping ingredients; sprinkle over the spinach mixture. Bake, uncovered, at 350 degrees F for 30 minutes or until lightly browned.







Cheesy Creamed Spinach Casserole

INGREDIENTS
2 (10 ounce) packages frozen chopped spinach, cooked
1 (1 ounce) package dry onion soup mix
2 cups sour cream
1/2 cup shredded Cheddar cheese
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Grease a 2 quart casserole dish.
Drain spinach. In a medium mixing bowl combine spinach, soup mix and sour cream. Spoon into greased casserole dish and top with cheese.
Bake in preheated oven about 25 minutes, or until heated through.







Spinach Brownies

INGREDIENTS
1 (10 ounce) package spinach, rinsed and chopped
1 cup all-purpose flour
1 teaspoon salt
1 teaspoon baking powder
2 eggs
1 cup milk
1/2 cup butter, melted
1 onion, chopped
1 (8 ounce) package shredded mozzarella cheese
DIRECTIONS
Preheat oven to 375 degrees F (190 degrees C). Lightly grease a 9x13 inch baking dish.
Place spinach in a medium saucepan with enough water to cover. Bring to a boil. Lower heat to simmer and cook until spinach is limp, about 3 minutes. Remove from heat and set aside.
In a large bowl, mix flour, salt and baking powder. Stir in eggs, milk and butter. Mix in spinach, onion and mozzarella cheese.
Transfer the mixture to the prepared baking dish. Bake in the preheated oven 30 to 35 minutes, or until a toothpick inserted in the center comes out clean. Cool before serving







Spinach Cheese Pie

INGREDIENTS
2 (9 inch) pie crusts
1 (10 ounce) package frozen chopped spinach, thawed and drained
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
1/4 teaspoon ground nutmeg
15 ounces ricotta cheese
8 ounces mozzarella cheese
1 cup grated Parmesan cheese
2 cups diced Cheddar cheese
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Press bottom pie crust into glass pie dish.
In a large bowl, combine the spinach, salt, pepper, nutmeg, ricotta, mozzarella, Parmesan, and Cheddar cheeses. Mix together well and pour into bottom pie crust. Place second pie crust on top of filling and trim edges.
Bake at 350 degrees F (175 degrees C) for 40 minutes. Let stand 10 minutes and cut into wedges.







Best Spinach Dip Over

INGREDIENTS
1 cup mayonnaise
1 (16 ounce) container sour cream
1 (1.8 ounce) package dry leek soup mix
1 (4 ounce) can water chestnuts, drained and chopped
1/2 (10 ounce) package frozen chopped spinach, thawed and drained
1 (1 pound) loaf round sourdough bread
DIRECTIONS
In a medium bowl, mix together mayonnaise, sour cream, dry leek soup mix, water chestnuts and chopped spinach. Chill in the refrigerator 6 hours, or overnight.
Remove top and interior of sourdough bread. Fill with mayonnaise mixture. Tear removed bread chunks into pieces for dipping.

My favorite way to have spinach is to wilt it in a saute pan- do not cook it all the way. Use medium heat. Put some olive oil and fresh garlic in, put the whole bag of spinach on top (it shrinks a lot) and keep turning it. Its done when it has shrunk a bit but isn't fully cooked. Serve it warm-- makes a great bed for a piece of blackened chicken or fish.

I have a steamer and I use Ms. Dash seasonings instead of salt or pepper. It only takes about 5 minutes to steam. Sometimes I cut up a little bellpepper, zuchinni, asparagus with it in the steamer and sometimes I put a little olive oil over it. Sometimes I put a little pepper sauce on it (banana peppers and vinegar).

If you've never used spinach instead of lettuce on sandwiches you should try it. You might really like it...I do tomato, sprouts, avacado and spinach sandwiches and I like it...you might

I never put salt on my spinach but some people do. I never boil spinach either but lots of people do. I have always thought that steaming vegetables was better at retaining vitamins than boiling but I don't know. I just like steamed.

Sometimes I put spinach in stir fry and sometimes I put in in eggs for breakfast (and lots of people think that is disgusting but I love it.) I use a LOT of spinach and grow it in my garden. If I run out of spinach, I'll use cabbage and spice it the same way with a totally different taste. I love cabbage too. Steamed or stir fried for me.

If you don't have a steamer, some bags of spinach are microwavable. Just pop in in the microwave for however long it says and season with your favorites. Delicious. Spinach is my favorite vegetable! Good for you for deciding to eat more leafy vegetables!!! If you don't love it from the beginning, it will grow on you and you will get to where you love it and think you are starving if there isn't spinach or cabbage in the house. Its my staple and so quick and simple to cook.

That Soldier seems like a serious cook. You don't have to make anything that complicated unless you just want to. Her recipes sound nice but time consumning. If you don't have time, just do something quick...lots of five minute meals with spinach.

Spinach Dip I
This is a great recipe for cold spinach dip. Serve it with vegetables, crackers or bread.

INGREDIENTS
1 (10 ounce) package frozen chopped spinach, thawed and drained
1 (8 ounce) container sour cream
1 cup mayonnaise
1 (.4 ounce) packet dry vegetable soup mix
DIRECTIONS
In a medium mixing bowl combine spinach, sour cream, mayonnaise and vegetable soup mix. Mix well. Refrigerate it for 4 hours. Stir before serving.

You can steam it in a steamer basket, you could saute it in olive oil along with some garlic, onion, salt & pepper, mushrooms, at the end add feta cheese if you have any. Or just eat it in a salad raw. But you want to cook it how about an omelet? Just add before its done or saute the spinach with some tomatoes and mushrooms then add to your basic omelet.

Place spinach in boiling water then cook for just a few minutes then drain. Great with vinegar or in an egg omelet!!

Before you cook it all, save some to make a salad with. Spinach makes the best salad.

You can cook it, but fresh spinach makes great salads. Mix with or sub for other types of greens. It really holds up to hearty extras like bacon and cheese.

If you really want to cook it - one of our favorite sides in my home is to shred it and microwave it with a bit of cream cheese and parmesan and a squeeze of lemon juice.

1.Wash in the sink very well -need to remove soil or grit.
2. cut off all the stems if you have the patience.
3. steam cook until wilting.
4. Serve hot with some toasted slivered almonds
It is wonderful and good for you.

Spinach is so versatile. Wanna try something crazy? Deep fry your spinach and serve with mashed potato. I think Emeril did that on his show.
