I am makeing lasagna for dinner and the ricotta cheese is frozen solid because it was placed in the wrong part of the fridge :S - can I sub cottage cheese instead?

put the tub of ricotta in sink of cold water.(if you use hot it will start to cook your cheese)......it should be dethawed within the hour..then add to your lasagna. I never use ricotta when making lasagna...i often use cheddar cheese with mozzerella cheese but NO do not use cottage cheese* it will ruin the whole lasagna and all that effort that goes into making it. GOODLUCK*

Yes you can but it tends to run more making your lasagna a bit wetter. Ricotta takes the heat better. "Mangia cakes" always use cottage cheese!

Yep cottage cheese works fine, just drain excess whey from it to avois being to "wet". It holds up fine but you may want to add a little teaspoon of sugar to make it taste a little more like ricotta.

Hi ducky,
Don't use cottage cheese your lasagna will be edible and that's
all no flavours will be infused from it ........just grate your frozen
ricotta, simple really.
Don't forget the warm garlic bread.

if u have a microwave add i/4 cup water and derrost the riccot it will be fine the cottage cheese could be used put it spoils the taste and the texture

You can use it, but I would put the package of ricotta in a warm bath to unfreeze it if you have time.

Just microwave defrost the ricotta - you are gonna bake it anyway
