How about Shepard's Pie?
Season the ground beef and brown. I like a little salt and pepper, garlic and minced onion. Drain it well and place in a baking dish.
Whip up some mashed potatoes. Instant will be fine if you want.
Spread the potatoes on top of the ground beef. Sprinkle liberally with shredded cheese and bake until hot all the way through and the cheese is all bubbly.
If you want to toss in the veggies too, you can layer a can of corn between the meet and potatoes. Just be sure to drain it well.
Just a thought.
Another idea might be to brown the meat and stir in a can of Cream of Mushroom soup and a few extra sliced mushrooms. Serve as a 'gravy' over mashed potatoes, noodles or rice.
Hope you find something good.

My favorite:
Salisbury Steak
For the patties:
1 lb. 96% lean ground round
1/2 small onion, chopped fine
1/2 cup plain breadcrumbs
1 egg
1 t. Coleman's mustard
2 T. worchesteshire sauce
1/2 t. thyme
dash salt & pepper
For the gravy:
1 jar store-bought beef gravy (I like Heinz fat free, keeps the calories down)
1 t. Coleman's mustard
1 T. worchesteshire sauce
1/2 t. thyme
dash salt & pepper
1 T. butter
8 oz. package of mushrooms, cleaned and sliced
1/2 cup red wine
Mix all the ingredients for the patties in a large bowl like for meatloaf, when well blended shape into 4 oval patties, and brown in a non-stick pan. When browned on the outside but not cooked through, place in an oven safe dish.
In the same pan, place the butter and mushrooms, give them a good saute. When browned to your liking, add the red wine and let simmer until the wine reduces almost completely. (Only takes a few minutes.) Add the mushrooms on top of the patties in the dish.
In a medium bowl, mix the rest of the gravy ingredients well and pour over the patties and mushrooms. Bake at 350 degrees, covered with foil, for about 30 minutes.
You can get Coleman's Mustard in the spice section of the grocery store.

We make a soup that we call Hamburger Stew.
Brown your burger in a large pot, season heavily with garlic powder and black pepper. Fill the pot with water and add quartered potatoes, skin on. Add dried parsley. Let boil for about 2 hours and you have a great meal that is perfect in winter. Serve it with buttered saltine crackers.
