Mom's Homemade Biscuits:

25 min 25 min prep
8-10 servings
8-10 biscuits

2 cups flour
4 tablespoons sugar
1 teaspoon salt
3 teaspoons baking powder
1/3 cup shortening (crisco works best)
3/4 cup milk

1. Mix together flour, sugar and salt. Add baking powder and then cut in shortening with pastry blender untill thoroughly incorporated.
2. Add milk and mix only until a soft dough forms. Dough may be slightly sticky but that is normal.
3. Genorously flour counter or board and transfer dough on top dusting with a small amount of flour if dough is sticky. Pat dough out with hands till about 1 inch thick and cut with biscuit cutter or large glass dipped in flour. Place on baking sheet about 1 1/2 inch apart. Bake 425 degrees for 12 to 15 minutes or until golden brown.
4. Note: Do not roll out with rolling pin as that will make for harder biscuits.

My biscuits always come out light and fluffy, and don't last long!

5 C flour
1/3 C oil (not olive)
2 tsp salt
4 Tsp baking powder
3/4 to 1 & 1/2 cups milk (reg or canned)

Place flour, salt, and baking powder in bowl. Mix well. Add oil and mix until little balls form throughout flour mixture. Start by adding 3/4 c milk, and continue adding until dough is moist and pulls from sides of bowl. Dough will be quite moist. Sprinkle some flour on board (or countertop) and place dough in center, add enough flour on top to keep hands and buscuit cutter from sticking to dough. Press out with hands until about 1 & 1/2 inches thick and cut, placing each biscuit on baking sheet sprayed with pam. Place in pre-heated 425 degree oven until tops are golden brown. (approx 18 min) These have never failed to get high and light, good luck!
Tip: If you don't have buscuit cutter, large glass without fluted rim works fine. Also my secret is not rolling my dough or overworking it, the less its handled the lighter the texture!

I could never make good biscuits until I got this recipe. Now I am proud I can! They are called Butter Biscuits:
2 cups self rising flour
1 cold stick margarine
2/3 cup of buttermilk

cut the cold margarine into the flour until all crumbled. Add the buttermilk. Drop all out onto a floured surface. Pat out with floured hands until desired thickness. Cut out circles with a cup of glass. Makes 8 biscuits. 375 degrees. Can double the recipe if needed.

Easy Biscuit Mixture
Use as you would a baking mix. The possibilities are endless!

INGREDIENTS
10 cups all-purpose flour
1/2 cup baking powder
1/4 cup white sugar
2 teaspoons salt
2 cups shortening
DIRECTIONS
In a large bowl mix together the flour, baking powder, sugar, and salt. Cut in shortening until mixture resembles coarse crumbs.
Store in an airtight container for up to 6 weeks.

First, dissolve a package of yeast in 1/2 cup of warm water, and set aside. Mix together 5 cups of AP flour, 1 teaspoon of baking soda, 1 teaspoon of salt, 1 tablespoon of baking powder, and 2 tablespoons of sugar. Cut in 3/4 cup of shortening. Add yeast and 2 cups of buttermilk. Mix well.

On a lightly floured surface, roll out dough to the desired thickness. Cut out with a biscuit cutter and place on a baking sheet. You can spray/grease the baking sheet, or use a Silpat.

Bake in a 400 degree oven for about 12 minutes or until browned. It’s best to take them out just before they’re as brown as you like. I will remind us of what Alton Brown always says: Done in the oven equals overdone on the plate.

The best recipe I have ever used comes off of the side of a box of Bisquicik. Just buy the Bisquick, and the recipe will be on there. It is tasty, and very easy.

Homemade Butter Biscuits
1 cup of flour
2 tsp. CALUMET Baking Powder
1/4 tsp. salt
1/4 tsp. cream of tartar
1/4 tsp. sugar
1/4 cup (1/2 stick) butter or margarine
1/3 cup milk

PREHEAT oven to 450°F. Sift flour, baking powder, salt, cream of tartar and sugar in medium bowl. Cut in butter until mixture resembles coarse crumbs. Add milk; stir with fork or spatula until soft dough forms.
PLACE on lightly floured surface; knead 8 to 10 times or until smooth. Pat dough lightly into 1-inch thick circle. Cut with floured 2-inch cookie cutter to make 8 biscuits. Place on ungreased baking sheet.
BAKE 10 to 12 minutes or until golden brown.

Buttermilk Biscuits

2 cups flour
4 tsp. CALUMET Baking Powder
1/2 tsp. salt
1/2 tsp. cream of tartar
1/4 tsp. baking soda
1/3 cup shortening
1 cup buttermilk
2 Tbsp. butter or margarine, melted, divided

PREHEAT oven to 450°F. Mix flour, baking powder, salt, cream of tartar and baking soda in large bowl until well blended. Cut in shortening until mixture resembles coarse crumbs. Add buttermilk; stir with fork until mixture forms a soft dough.
PLACE on lightly floured surface; knead 20 times or until smooth. Pat or roll out dough to 1/2-inch-thickness. Cut into circles with floured 2-inch cookie cutter. Place on ungreased baking sheet. Brush with half of the butter.
BAKE 12 minutes or until golden brown. Brush with remaining butter.
