chicken divan
- 3 chicken breasts
1 (10 oz)package frozen broccoli
1 (10 3/4 oz) can cream of chicken soup
1/2 cup mayonnaise
1 tsp lemon juice
dash of curry
1/2 cup shredded cheddar cheese
Stuffing crumbs or cracker crumbs
Preheat oven to 350° F.
Boil chicken breasts in salted water until done. Cut into bite size pieces.
Place chicken and frozen broccoli into bottom of 9x12 pan.
Mix together soup, mayonnaise, lemon juice, curry, and cheese. Pour over chicken and broccoli.
Spread stuffing or cracker crumbs over top.
Bake at 350 degrees uncovered for 35 to 40 minutes

Well ask him, and if he tells you to surprise him then you should try and remember what foods he likes best and make sure they are kid friendly then pick from that list to make a sort of meshed birthday dinner (note i did not say mixed i said meshed, so don't throw everything in a blender and hit puree... O_O)

Fix whatever your husband 'likes best' for dinner ... ask him if you don't have a clue ... and if it's not 'kid friendly' then the kids should have some good exposure to 'adult foods' and this would be a good time for you to start the exposure.

General Tso's Chicken (Tso Chung Gai)
4 servings 30 min 20 min prep
For the Chicken
1 large egg, beaten
1/4 teaspoon salt
1 pinch black pepper
2 tablespoons cornstarch
1 lb boneless skinless chicken thighs, cut into 1 inch cubes
For the Sauce
2 1/2 tablespoons dark soy sauce
1 teaspoon minced garlic
1 tablespoon minced fresh ginger
2 tablespoons hoisin sauce
3 teaspoons sugar
3 teaspoons chinese rice wine vinegar
1 1/2 teaspoons dry sherry
For the Rest
peanut oil
cornstarch, for dusting
8 small dried hot chili peppers
1/4 cup finely sliced green onions
4 cups broccoli florets, steamed
Mix together egg, salt, black pepper, and cornstarch in a bowl.
Add the chicken cubes; mix to coat, and marinate for at least 15 minutes.
In a small bowl, combine soy sauce, garlic, ginger,hoisin sauce, sugar, rice wine vinegar, and sherry for the sauce; reserve.
Heat wok over high heat for a minute or so; add about 3 1/2-4 cups of peanut oil to wok, and heat to 350 degrees F.
With tongs, remove chicken cubes individually from bowl, dust with 1 tbsp. cornstarch, shaking off excess, and place in the hot oil.
Deep-fry chicken pieces for 1 1/2-2 minutes, until browned and crisp.
turn off heat, and remove chicken with a wire strainer and drain over a bowl.
Pour off all but 1 1/2 tbsp. of the oil from the wok.
Heat the wok over high heat for 20-30 seconds; add the chilies and stir-fry for 15-20 seconds, then add the green onions, cooking for 30 seconds more.
Add the chicken and cook, stirring, for 1 minute; remove all from wok and set aside.
Stir sauce mixture into wok,stirring well, until sauce thickens into a nice glaze
add chicken and chilis/onions back into the wok, stirring until everything is well coated, about 1 1/2-2 minutes.
Place on platter; and garnish with steamed broccoli florets.
Serve with rice.
Perfect Basic White Rice
4 servings 20 min
1 cup long grain rice
2 cups water
1 teaspoon salt
1 teaspoon butter (optional)
In a saucepan with a good fitting lid bring water, salt and butter if desired to a boil.
Add rice and stir.
Cover and reduce heat to medium low. You will know that your temperature is correct if a little steam is visible leaking from the lid. Alot of steam means your heat is too high.
Cook for 20 minutes.
DO NOT LIFT LID!
The steam that is trapped inside the pan is what allows the rice to cook properly.
Remove from heat and fluff with fork.
Serve!
Bijan's Pina Colada Birthday Cake
This cake is so light and refreshing.
15 servings 1 hour 30 min prep
1 (18 ounce) box yellow cake mix
1 (3 1/2 ounce) box instant vanilla pudding
1 (3 1/2 ounce) box instant coconut cream pudding mix
2 cups milk
8 ounces cream cheese, block (at room temperature)
2 (20 ounce) cans crushed pineapple, drained
1 large Cool Whip
Bake cake as suggested on box in a large sheetcake pan.
Cool.
Combine pudding's, milk, and cream cheese and beat with electric mixer.
Refrigerate pudding mixture for an hour.
Spread pudding mixture on cake then add a layer of drained pineapple.
Top with a layer of cool whip.
Store in fridge.
Note: for a more coconut tasting variation you can use 2 boxes coconut cream. The nutritional info is flawed because I don't know how many servings it makes.
