I want to bake my chicken cutlets, its now marinating in a garlic sauce, and spices, i want to add onion and bread crumbs, and bake... but how do i do it without the crumbs turing mushy, i want them crispy.

Since they're cutlets, you don't want to pan fry them?

I would suggest cooking the cutlets on a rack... so the cutlets aren't sitting in a puddle of the juices which is what causes them to sog out. If you do use a rack, you may want to drizzle some butter on top of the cutlets so they oil will help brown things and add a nice flavor.

If you're going to bake them, try baking them on a rack like the other suggestions. Also, try using Panko (Japanese bread crumbs) instead of regular bread crumbs. The texture is coarser so will stay crispy and delicious!

You could try putting the cutlets on cooling rack with a cookie sheet underneath. That will let the heat get to the bottom of the meat, and should keep it crispy.

use the kind of roasting pan that have the tray with the holes, this way all the juices of the chicken will be catch up underneath preventing that bread crumbs from soaking them all up.

When you are ready to bake the chicken, place in an uncovered dish and sprinkle breadcrumbs last before placing in oven.

um.. try to deep fry it (but dont put too much oil, that makes u fat!!!)
