I just got my squirell and I just need a great recipie. I got one, big, gray squirell.

Once you have cleaned and skined it, Place it into a bowl
full of water and leave for a day, keep changing the water every few hours . This will help take all the blood out of the meat.
After a day replace the water with a can of your finest ale,, over hear its guinnes. Leave to soak for as long as you wish , no longer than 24 hours though.
Take from bowl wrap in tinfoil and cook slowly for an hour.
Serve with choice of vegtables and enjoy

I absolutely adore squirrel. It is the meat of the gods.
But.....

If it was a large squirrel and the skin was hard to get off then it is old. That doesn't ruin the flavor it does however make the meat a little tough. This means you have to use it as a stew or something with a pressure cooker.

What I do is separate out the young from the old and do the fried squirrel and what not with the young and do the stews with the old

While the previous poster does seem quite learned; squirrel stew has such a rich flavorful broth I would put it up against any other animal when it comes to stew. ....

I have got to go hunting.

Just pick out your favorite chicken recipe and substitute the squirrel for the chicken. Since you have only one squirrel, I'd go with something like a chicken soup recipe using squirrel instead of the chicken. Another idea is to make stew or squirrel and dumplings. If you make the dumplings, use chicken broth for your liquid since squirrel meat is very lean and makes rather poor broth. Even better would be to go back into the woods and get some more squirrels. Preferably young tender ones that you could fry.... Yum!! Yum!! You'll need about two squirrels per person unless you are feeding hungry hunters who love fried squirrel like I do then you'll need 3 or 4 per person.

Camp Stew


~ 10 squirrels
~ 2 cups corn
~ 1 lb. bacon, chopped
~ 5 lb. potatoes, diced
~ 2 qt. tomatoes
~ 3 lb. onions
~ 2 lb. lima beans
~ 1 cup chopped celery
~ 1/4 cup worcestershire sauce
~ salt & pepper to taste
~ flour


Put the squirrels in a large pan. Cover half way with water. Bring to a boil. Cover and simmer until the squirrels are tender.

Remove the squirrels from the stock. Set the stock aside. Remove the meat from the bones.

Return the meat to the stock and add the corn, bacon, potatoes, tomatoes, onions, beans, celery, salt & pepper, and worcestershire sauce.

Cook for 2 hours stirring occasionally.

To thicken the stew add a small amount of flour mixed with water. Simmer 20 - 30 minutes longer.

Serve & Enjoy!

If it is a younger squirrel, you can use about any chicken recipe. But if it is an older squirrel, it may be on the tough side, I would make a stew or soup, or squirrel with dumplings or noodles. Something that cooks in liquid for a while to make it tender.

Squirrel gravy and dumplings is one of my favorite ways to eat squirrel, and it's a good way to make a little meat go a long way.

From experience I just convert any standard recipe for poultry to squirrel and rabbit.
By just replacing the meat.
Squirrel and dumplings is unbelievable good.
For deer I do the same with beef recipes
