Mormons don't believe in the Catholic Saints.
The term "Saints", as Paul used it in the Bible, was meant to denote devout individuals who followed Christ, because they were made "Saint", or Holy.
Catholics took this term and applied it to canonized religious legends; people who lived catholic lives and advanced the cause of Christ or of the church.
Mormons took this term and applied it to anyone who is a member of their church. Neither of these two uses is completely accurate, but paints a portion of the picture.
Even though they don't honor/worship/pray to the "Saints", Mormons celebrate many catholic holidays, such as St. Patrick's Day, St. Valentine's Day, St. Nicholas Day (i.e. Christmas), and many others. It's not by any means 'pagan' for a Mormon to do so, but these holidays are seen as secular, rather than religious, holidays for the Church.

Good grief, I don't know how many people get their whole knowledge of religion while listening to a Shouter in the pulpit and dozing.

A saint defined as a follower of Christ, yes.
A saint as a venerated individual who is prayed to for intercession, no.
