I bought some ground chicken at the store today. Anyone have any tried and true recipes to share?

Rachael Ray has a lot of great recipes using ground chicken. My favorite is for Spankopita Meatballs...

Spanikopita Chicken Meatballs with Spicy Cucumber and Yogurt Sauce

1 tablespoon extra-virgin olive oil, plus some for liberal drizzling
1 small onion, finely chopped
4 cloves garlic, chopped, divided
2 boxes frozen chopped spinach, defrosted.
3/4 cup crumbled feta cheese
1 pound ground chicken
1 tablespoons grill seasoning (recommended: McCormick Montreal Seasoning)
1 1/2 cups Greek style plain yogurt
1/3 seedless cucumber, peeled and chopped
3 tablespoons fresh dill
1/2 lemon, juiced
1 1/2 teaspoons, 1/2 a palm full, cumin
1 1/2 teaspoons, 1/2 a palm full, coriander
Salt

Preheat the oven to 400 degrees F.

In a bowl combine onion and 3 cloves of garlic. Squeeze the water out of the spinach until completely dry. Separate the spinach as you add it to garlic and onion. Add feta, chicken and grill seasoning to the bowl and a liberal drizzle of extra-virgin olive oil. Mix the meat with veggies and feta and form 18 (1 1/2-inch) meatballs. Place the meatballs on a nonstick cookie sheet and bake 10 to 12 minutes until they are golden and juices run clear.

Place yogurt, garlic, cucumber, dill, lemon juice, cumin, coriander and a little salt in food processor and process until smooth. Adjust seasonings and transfer to a serving bowl. Serve meatballs alongside sauce with toothpicks.

Spicy Ground Chicken:

35 min 15 min prep
4-6 servings

1 lb ground chicken or ground turkey (you can use sliced boneless breasts, but I always use ground - DO NOT use ground chicken in the tube)
1 zucchini, sliced
1 green pepper, sliced
1 red pepper, sliced
1 onion, chopped
1 cup mushrooms, sliced
1 tablespoon minced garlic
2-3 cups chunky salsa (I use hot)
4 soft flour tortillas (optional)
1 teaspoon olive oil (optional)

1. Slice all veggies.
2. Spray a non-stick skillet with cooking spray or optional olive oil.
3. Cook ground chicken until completely done, about 10 minutes.
4. Remove from pan and set aside.
5. Add onions and garlic to pan and sautee til translucent.
6. Add zuccini, mushrooms, red and green peppers.
7. Cover, stirring often until cooked.
8. Don't drain liquid.
9. Add cooked ground chicken and salsa to veggies.
10. Mix well.
11. Simmer about 10 minutes.
12. Serve wrapped in a soft flour tortilla or over rice.
13. DO NOT use Ground Chicken in the tube as it is dry and ruins the dish.

Middle Eastern Chicken Sloppy Joe From Food Network Kitchens

1 tablespoon extra-virgin olive oil
1 bunch scallions (white and green parts separate), thinly sliced
1 teaspoon ground cinnamon
1 teaspoon kosher salt
Freshly ground black pepper to taste
2 cloves garlic, minced
2 medium tomatoes, diced
1/4 cup golden raisins
1 pound lean ground chicken
1/4 cup plain low-fat yogurt
1/3 cup pine nuts, toasted
4 (4-inch) whole wheat pitas with pockets, tops trimmed and warmed
Suggested servings: sliced tomato and cucumbers

Heat olive oil in a medium skillet over medium heat, add the scallion whites cinnamon, salt, and pepper, and cook until tender, about 5 minutes. Stir in the garlic, tomato, and raisins and cook over high heat until mixture is almost dry, about 6 minutes. Add the chicken and cook stirring until meat is cooked through, about 5 to 6 minutes. Remove from the heat and stir in the green part of the scallions, yogurt, and pine nuts. Serve mixture stuffed into warm pita with tomato slices and cucumber slices.

Ranch Chicken Loaf

2 eggs, beaten
3/4 cup ranch-flavored tortilla chip crumbs
3 Tbsp. salsa
2 Tbsp. ranch-flavored salad dressing
1 tsp. chili powder
1/2 tsp. cumin
1 lb. ground chicken

Preheat the oven to 350 degrees F. In a large bowl, mix together the eggs, tortilla chip crumbs, salsa, salad dressing, chili powder, and cumin. Add chicken and mix gently but thoroughly. Shape into loaf on slotted baking pan or broiler pan.
Bake at 350 degrees F for 1 hour, until internal temperature registers 175 degrees F. Cover with foil and let stand for 10 minutes. Slice and serve with sour cream and more salsa.
