Meat Loaf Pie

"Great way to have the favorite meal of meat loaf and mashed potatoes in one. This is great for the kids. Serve with green beans."
Original recipe yield: 8 servings


INGREDIENTS
1 pound ground beef
1 small onion, chopped
1 egg
1 tablespoon ketchup
1 tablespoon Worcestershire sauce
1 (8.75 ounce) can whole kernel corn
1 (9 inch) unbaked pie crust
2 cups prepared mashed potatoes
1/2 cup shredded Cheddar cheese

DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C).
In a skillet over medium heat, cook and stir the ground beef and onion until beef is evenly brown. Drain, and allow to cool slightly.
In a bowl, mix the cooked beef and onion, egg, ketchup, and Worcestershire sauce.
Spread the corn in the bottom of the pie crust. Layer with the beef mixture. Spoon the mashed potatoes over the beef, and top with cheese.
Bake 30 minutes in the preheated oven, until cheese is bubbly and lightly browned.


Ground Beef Shepherd's Pie

"Here's a quick, throw together recipe for shepherd's pie. Browned meat smothered in rich mashed potatoes with your favorite vegetables. A quick and easy dinner to make for your family."
Original recipe yield: 4 servings

INGREDIENTS
1 tablespoon vegetable oil
1 onion, chopped
1 pound lean ground beef
1 teaspoon dried basil
1 clove garlic, minced
1 cup green beans
1 cup tomatoes, diced
2 potatoes, cooked and mashed
1 egg, beaten
1/2 cup water
1/4 cup shredded Cheddar cheese (optional)
DIRECTIONS
Preheat oven to 350 degree F (175 degree C). Coat a 2 quart casserole dish with cooking spray.
Heat oil in a large skillet over medium heat. Cook onion in oil for 5 minutes, stirring frequently. Stir in the ground beef and basil, and cook and stir for 5 more minutes. Mix in the garlic, green beans, and tomatoes, and simmer for 5 minutes. Transfer beef mixture to prepared dish.
In a mixing bowl, mix together the mashed potatoes, egg, and water. Spread evenly over meat mixture.
Bake in a preheated oven for 15 to 20 minutes, or until potatoes start to brown on top. Sprinkle with cheese, and continue cooking for 5 minutes.

1 pound sirloin steak, grounded
salt to taste
ground black pepper to taste
1 (14 ounce) can beef broth
3 large carrots, diced
3 potatoes, cubed
1 cup frozen green peas, thawed
3 tablespoons cornstarch
1/3 cup water
2 (9 inch) refrigerator pie crusts
DIRECTIONS
In a saucepan over medium heat, brown the pieces of meat on all sides. Pour in some water to almost cover. Bring to a boil and reduce heat. Simmer until meat is tender and falls apart easily; about 2 to 3 hours. Transfer meat to a large mixing bowl. Shred the meat slightly and add salt and pepper to taste.
In another 2 quart saucepan over medium heat, pour in beef broth and add carrots and potatoes. Cook until almost tender; about 15 to 20 minutes. Preheat oven to 350 degrees F (175 degrees C).
When the carrots and potatoes are done, transfer to the large mixing bowl with the beef; leaving the liquid in the pan. Combine the peas with the carrots, potatoes and beef.
Dissolve the cornstarch with the 1/3 cup of water. Pour into the saucepan of beef broth, stirring constantly. Bring to a simmer and reduce heat; cook for 5 minutes.
Line a 9 inch pie plate with one of the pie crust following the package directions. Place the beef mixture into the pie crust. Pour the gravy over the top of the mixture, then cover with the other pie crust. Bake in a preheated oven until the crust is golden brown; about 25 minutes. Let cool for 5 minutes before serving.

I've done it, and it's great. Use about a pound of ground beef. Brown the beef and add an onion, or if you're in a hurry use onions soup mix. Stir it in and add carrots and peas, and salt and peper. Thicken the gravy. Put it into a deep oven proof dish, put pie crust over the top. Back about 1 hour at 350. I like it served with mashed potatoes.

Beef Pot Pie With Mashed Potato Crust:

3½ hours 30 min prep
8 servings

2 lbs stew meat
1/3 cup all-purpose flour
2 tablespoons olive oil
8 medium carrots, 2-inch pieces
2 medium onions, thin wedges
1 cup dry red wine
2 teaspoons garlic, minced
2 teaspoons salt
1/2 teaspoon dried marjoram
1/2 teaspoon dried thyme
6 cups mashed potatoes
1 tablespoon parmesan cheese, grated

1. Heat oven to 325ºF. Have a shallow 3 quart baking dish ready.
2. Coat meat with flour, shaking off excess. Heat 1 tablespoon oil in a large heavy skillet over medium-high heat. Brown meat in 2 to 3 batches, adding more oil as needed. Remove to baking dish with a slotted spoon.
3. Add carrots and onions to dish. Mix wine, garlic, salt and herbs. Add and stir to distribute. Cover tightly with lid or foil.
4. Bake 2 hours or until meat and vegetables are tender. (If making ahead, refrigerate stew and mashed potatoes separately up to 3 days.).
5. To serve: (If made ahead, reheat stew, covered, in 375ºF oven 40 to 45 minutes until hot and bubbling). Increase oven temperature to 425ºF. Spoon mashed potatoes on stew and sprinkle with parmesan cheese. Bake 10 to 15 minutes longer until edges of potatoes are golden brown.

Shepherd's Pie Recipe (Cottage Pie in the UK)
This is a tasty shepherd's pie (or cottage pie) made with ground beef, mashed potatoes, and seasonings.

1 1/2 pounds lean ground beef
2 tablespoon butter
1 teaspoon Worcestershire sauce
2 eggs, separated
6 tablespoons butter
8 potatoes, peeled, boiled, and mashed
1 cup finely chopped onion
1 tablespoon ketchup
beef broth
1/2 cup heavy cream
1/4 teaspoon garlic powder
Parmesan cheese

Brown ground beef and sauté onions in 2 tablespoons butter until golden. Mix ground beef with onions, ketchup, Worcestershire sauce, salt, and pepper. Add a few tablespoons of beef broth and cook, covered, over low heat for 15 to 20 minutes, adding more beef broth as necessary to keep moist. Beat egg yolks until light, then in another bowl, beat whites until stiff. Beat the yolks, cream, 6 tablespoons butter, and garlic powder into hot mashed potatoes. Gently fold in beaten egg whites. Put meat mixture into a casserole then top with potato mixture. Sprinkle with Parmesan cheese and bake at 350° until potato topping is puffed and browned, about 25 to 35 minutes

Makes 6 to 8 servings.

1- 1/2 pounds ground beef (96% lean ground round)
2 cups Italian-style bread crumbs (8 oz. package)
3 cups (12 oz. package) chopped onions, divided
2 large eggs, lightly beaten
1 teaspoon salt
1 teaspoon black pepper

2 tablespoons olive oil
4 cups shredded potatoes (1/2 26 oz. frozen package)
1/2 pound (8-oz package) Mexican four-cheese blend
1 tomato for garnish


1. Preheat oven to 375 degrees.

2. Mix thoroughly ground beef, bread crumbs, 1 cup of the chopped onions, eggs, salt, and pepper and press onto bottom and up the sides of a 10" springform pan
(approximately 3/8" thick).

3. Bake in preheated 375 degree oven for 10 to 15 minutes.

4. While beef is baking heat the olive oil in a large skillet. Add the remaining 2 cups of onion and the potatoes and saute for 10 minutes on medium high heat, turning to prevent sticking.

5. Remove beef mixture from oven and fill with the sauteed onions and potato mixture.
Cover with cheese and return to 375 degree oven for 20 to 25 minutes, until lightly
browned.

6. Peel tomato and roll the peel tightly to make a rose and place on center of the pie.
Chop remaining tomato and apply as garnish around edge of the pie.

Ewww, had a supervisor that called it meat pie ,
not good, go with peas ,carots, celery, chicken recipe

I have made this before and it was sooo good.
I looked up online the recipe, and it really worked so here....
