It's very tender and flaky cooked in the crock. I personally love it this way. Slice openings in the pot roast to insert a clove of garlic in various places throughout the roast. Sear on all sides in a heavy iron skillet. Place half veggies on bottom, the roast, then the remaining veggies on top. (I usually add onion, celery, carrots, a turnip and potatoes, but you can use what ever veggies you like) with 1 can of Campbell's Golden Mushroom, 1 can of Cream of Mushroom soups and beef broth (enough to cover). Modify seasonings according to your taste. Depending on how much time you have (low for about 12 hours, high for 6-8 hrs). Some crockpots cook faster or slower than others, so it's best to try it when you are home at first to get a better idea of the timing. Serve with egg noodles or any other pasta of choice.

This is one i like, try http://www.a-crock-cook.com for other great recipes.

Beef Stew with Dumplings
Ingredients
1¼ lb (500g) beef, cubed
3 tbsp all-purpose (plain) flour
2 onions, medium - sliced
300ml water
2 tsp prepared mustard (paste)
1 tsp brown sugar
salt and pepper
Dumplings
3 oz (85g) self-raising flour
1 oz (25g) butter
1 tsp dried herbs
pinch salt and pepper
2fl oz (50 ml) milk

1 Put the flour in a plastic bag and add the beef. Toss around until coated.
2 You could now brown the meat if you desire - however we did not have time.
3 Put the beef and onion in the crock pot.
4 Mix the other ingredients together and pour over the beef.
5 Cook on low for 8-10 hours
6 Sometime during this period make the dumplings.
7 Combine all the ingredients, with sufficient milk (may need slightly more or less) to make a soft dough.
8 Shape into four to six balls.
9 About 40 minutes prior to serving, put the dumplings in the crock pot.
10 Turn on high, replace lid. And enjoy in 30-40 minutes.

1 . Spray inside of 4- to 5-quart slow cooker with cooking spray.
2 . Remove inner skin from ribs. Mix brown sugar, salt, pepper, liquid smoke and garlic; rub mixture into ribs. Cut ribs into 4-inch pieces. Layers ribs and onion in slow cooker. Pour cola over ribs.
3 . Cover and cook on low heat setting 8 to 9 hours or until tender. Remove ribs from slow cooker. Drain and discard liquid.
4 . Pour barbecue sauce into shallow bowl. Dip ribs into sauce. Place ribs in slow cooker. Pour any remaining sauce over ribs. Cover and cook on low heat setting 1 hour.

Note: This recipe was tested in slow cookers with heating elements in the side and bottom of the cooker, not in cookers that stand only on a heated base. For slow cookers with just a heated base, follow the manufacturer’s directions for layering ingredients and choosing a temperature.
