Italian Cabbage & Bean Soup:

12 servings

1 teaspoon olive oil
1/2 cup onions, chopped
1/2 cup celery, chopped
1/2 cup carrots, sliced
1 garlic clove, minced
1 1/2 cups green cabbage, shredded
1 cup tomatoes, diced with liquid
1 cup white beans, cooked
2 (1 1/4 ounce) packets onion soup mix, prepared
1 tablespoon parsley, chopped
black pepper, freshly ground

1. Place all ingredients in a large stockpot.
2. Bring everything to a boil and let boil for 30 minutes or until veggies are done.

First I would take a large pot, at least 4 quarts size.
Fry chopped Spanish onion in 2 TBSP Olive oil
Take 1/2 cabbage and slice it into strips into a glass pie plate.
Salt the cabbage,add a little water to the pie plate and place in the microwave oven to cook for 10 minutes. This will soften the cabbage a little before adding to the onions.
Add the cabbage to the pot with the onions plus 4 liters of wateror less, seasoned with BEEF soup base or VEGEETA according to the directions as to the amount needed for the amount of water you use. Sliced or chopped par cooked carrots can also be added. Simmer until all is cooked about 1 hour or so should be enough.
A can of STEWED TOMATOES can also be added if desired.
If the soup is too strong adjust the seasonings.
1 TBSP of honey might be good. Not too hard to make and it's delicious.

Cabbage Soup Recipe
1 head cabbage
6 green onions
2 green peppers
1 can diced tomatoes
1 bunch celery
1 pack Lipton onion soup mix (using self made vegetable broth tastes better)


Cut the vegetables into bite size pieces.
You can salute the vegetables a little in a frying pan first. Add a little salt and pepper for flavor if you want.
Mix everything in a large pot, and add enough water to cover everything.
Bring to a boil, then turn the heat down, and simmer until the veggies are soft.
Cabbage contains many nutrients, and is healthy for the body, and hence the cabbage soup recipe will do you good if you serve it once awhile with other varieties of foods. Hearty Cabbage Soup

4 cups chopped green cabbage (1/2 of a small head)
2 medium carrots, sliced
2 medium celery stalks, sliced
1 medium onion, chopped
1 pkg. (10 oz.) frozen green beans, thawed slightly
1 can (15-1/2 oz.) cannellini beans, drained, rinsed
6 cups water
2 cans (14-1/2 oz. each) chicken broth
2 cups canned crushed tomatoes, undrained
1 env. GOOD SEASONS Italian Salad Dressing & Recipe Mix

PLACE all ingredients in 6- or 8-qt. stockpot.
BRING to boil on high heat. Reduce heat to medium-low.
SIMMER 30 min. or until vegetables are tender.

Cabbage Soup

INGREDIENTS
6 (14.5 ounce) cans chicken broth
4 stalks celery, chopped
6 carrots, chopped
1 onion, chopped
2 cloves garlic, minced
1 medium head cabbage, shredded
1/2 cup barley
2 cups diced ham
1 tablespoon dried parsley
DIRECTIONS
Place the chicken broth, celery, carrots, onion, garlic, cabbage, barley, ham and parsley in a large pot over high heat. Bring to a boil, reduce heat to low and simmer for 1 1/2 hours.

i make a portuguese cabbage soup,
boil up a ham bone, white beans, cut up cabbage, a handful or 2 of brown rice, cut up carrot, a few cut up potatoes. sometimes i use portuguese sausage called linquicia instead of the ham, when i use the ham bone, always add plenty of ham also...cook for about 2 hours, or until all vegetables are done, and it thickens up..

start with cabbage then add carrots, garlic, salt ,corned beef ,potatoes...whatever you like...this what i like yummy
