me and my dad are spending 'quality time ' togetehr today and i need a recipe for our 'cooking time' .. it needs to be a main course and no meat please =]

Baked Eggs Florentine

2 C cooked spinach, well drained, seasoned to taste with salt and pepper
1 C heavy cream
hot sauce to taste (follow link to make your own)
8 eggs
1 C grated Swiss cheese
1/3 C grated or shredded Parmesan cheese

Preheat oven to 375° F. Butter 8 small ramekins, souffle dishes or custard cups. Spread each dish with a layer of spinach on the bottom and going up the sides.

Mix cream and hot sauce. Pour about 1 tablespoon of the cream mixture over spinach in each dish. Break 1 egg into each cup, then top with another tablespoon of cream.

Mix Swiss and Parmesan cheeses together. Divide cheese mixture over the top of the 8 cups.

Place filled cups in a water bath (a baking pan, filled halfway up the sides of the cups with boiling water). Bake for about 10 minutes or until egg white are completely cooked. (If you don't like your yolks runny, cook longer).

How about a fettucini alfredo? Just saute an 8 oz. package of sliced mushrooms in about 3 tbsp of butter with some garlic. When they're done, dump in a jar of roasted garlic alfredo sauce. Heat it up and serve over about 12 oz. of fettucini/spaghetti/linguini. Have some garlic bread and a green salad.

Bean and Cornbread Casserole

1 tablespoon vegetable oil
1 medium onion, chopped
1/2 cup chopped green pepper
2 cloves garlic, minced
3 cups cooked rice
2 (14 1/2-ounce) cans stewed tomatoes
1 (19-ounce) can kidney beans
1/2 cup fresh cilantro, chopped
1 tablespoon chili powder, divided
1 teaspoon salt
1/2 teaspoon ground black pepper
Vegetable cooking spray
1 (7-ounce) package cornbread mix
1 (8 1/2-ounce) can cream-style corn
Green pepper strips for garnish
Heat oil in large skillet over medium-high heat until hot. Add onion, green pepper and garlic; cook, stirring constantly, until tender. Stir in rice, tomatoes, beans, cilantro, 2 teaspoons chili powder, salt and pepper. Cook 5 minutes or until heated through; pour into 13x9x2-inch baking pan coated with cooking spray; set aside.
Mix cornbread mix according to package directions, add corn to mixture. Pour over top of casserole. Sprinkle with remaining 1 teaspoon chili powder.
Bake at 400 degrees F. 30 to 35 minutes or until cornbread is golden brown.
Cut into 8 squares. Garnish with green pepper strips, if desired.
Makes 8 servings.

or your own pizzas.....Buy pita bread, pour pasta sauce ontop, grated cheese, and whatever other toppings you choose....(onion, pineapple, tomatoes, mushrooms) bake for 10min 450F oven. They can be fun, and easy to make ..tosss up a nice garden salad to go with it*

PASTA WITH SHRIMP SCAMPI

1-1/2 lbs. unpeeled, medium-size fresh shrimp
1-2 tbls. chopped chipotle pepper in adobo sauce
2 garlic cloves, minced
2 tbls. veg. or olive oil
1/2 cup dry white wine or chicken broth
1 tbls. prepared mustard
1 tbls. Worcestershire sauce
1/2-3/4 cup butter, melted
1/2 tsp. salt
2 tbls. fresh lemon juice
1 lb. spaghetti, cooked
1/2 cup fresh parsley, optional
1/2 cup shredded Parmesan cheese

Peel shrimp and devein. Saute peppers and garlic in hot oil in a large skillet over medium-high heat until throughly heated. Note: (you could and should slice open peppers to remove seeds to tone down the heat. Depending on pepper size, one large will do. You adjust to taste.)
Add shrimp and cook, stirring constantly, 2-3 minutes or just until shrimp turns pink. Remove shrimp and set aside.

Stir in white wine, mustard, and Worcestershire sauce, cook over high heat 3-4 minutes. Return shrimp to skillet. Stir in butter, salt, lemon juice, cook 1-2 minutes or until combined and throughly heated.

Place pasta in a large serving dish, toss with shrimp mixture and parsley. Sprinkle with parmesan cheese.

Yields 4-6 servings.

Serve with salad and crusty bread
