here is a simple but DELICIOUS whole wheat bread..always turns out great.
INGREDIENTS
3 cups warm water (110 degrees F/45 degrees C)
2 (.25 ounce) packages active dry yeast
1/3 cup honey
5 cups bread flour
3 tablespoons butter, melted
1/3 cup honey
1 tablespoon salt
3 1/2 cups whole wheat flour
2 tablespoons butter, melted
DIRECTIONS
In a large bowl, mix warm water, yeast, and 1/3 cup honey. Add 5 cups white bread flour, and stir to combine. Let set for 30 minutes, or until big and bubbly.
Mix in 3 tablespoons melted butter, 1/3 cup honey, and salt. Stir in 2 cups whole wheat flour. Flour a flat surface and knead with whole wheat flour until not real sticky - just pulling away from the counter, but still sticky to touch. This may take an additional 2 to 4 cups of whole wheat flour. Place in a greased bowl, turning once to coat the surface of the dough. Cover with a dishtowel. Let rise in a warm place until doubled.
Punch down, and divide into 3 loaves. Place in greased 9 x 5 inch loaf pans, and allow to rise until dough has topped the pans by one inch.
Bake at 350 degrees F (175 degrees C) for 25 to 30 minutes; do not overbake. Lightly brush the tops of loaves with 2 tablespoons melted butter or margarine when done to prevent crust from getting hard. Cool completely
...This is another AMAZING loaf of bread...its called sweet amish white bread...tastes extra yummy toasted with some honey on it!
INGREDIENTS
2 cups warm water (110 degrees F/45 degrees C)
2/3 cup white sugar
1 1/2 tablespoons active dry yeast
1 1/2 teaspoons salt
1/4 cup vegetable oil
6 cups bread flour
DIRECTIONS
In a large bowl, dissolve the sugar in warm water, and then stir in yeast. Allow to proof until yeast resembles a creamy foam.
Mix salt and oil into the yeast. Mix in flour one cup at a time. Knead dough on a lightly floured surface until smooth. Place in a well oiled bowl, and turn dough to coat. Cover with a damp cloth. Allow to rise until doubled in bulk, about 1 hour.
Punch dough down. Knead for a few minutes, and divide in half. Shape into loaves, and place into two well oiled 9x5 inch loaf pans. Allow to rise for 30 minutes, or until dough has risen 1 inch above pans.
Bake at 350 degrees F (175 degrees C) for 30 minutes.

I luv making my own bread!!! esp. french bread...or baguettes...whatever you like to call it, and heres my recipie.
put a third of a packet of wet yeast in a bowl. add one tablespoon of sugar and one-fourth cup of very warm water...mix it and then leave it alone untill the top starts to buble very slightly.
add one cup of warm water, one tsp of salt, and 3 spoons of oil (olive oil is best) Mix together.
now start adding flour...usually from 3-5 cups...untill you have a slightly sticky dough.
Sprinkle flour on your counter and knead...I've found if I knead for up to 20min it comes out a whole lot fluffier!!!
Put the dough to rise for two hours...punch down and rise again for an hour (or rise overnight in the fridge)...then shape into 2 loaves...leave to rise for about and hour while the oven heats up to 450degrees.
Brush the top of the loaves with egg whites
Bake for twenty min...or till all crispy brown

Here is a nice easy bread recipe that my mom would use. It comes from the older version of the Betty Crocker cookbook.
Gather together the following ingredients:
2 packages of active dry yeast
2 Cups warm water (105 to 110 degrees F)
2 Tablespoons sugar
1 Tablespoon salt
1/4 Cup salad oil
6 to 6 1/2 Cups all purpose flour
Dissolve yeast in warm water. Stir in sugar, salt, oil and 3 cups of the flour. Beat (by hand) until smooth. Mix in enough remaining flour to make dough easy to handle.
Turn dough onto lightly floured board; knead until smooth and elastic, 8 to 10 minutes. Place in greased bowl; brush top with salad oil. Cover (with plastic wrap or clean dish towel) let rise in warm place until double, about 45 minutes. (Dough is ready if impression remains.)
Punch down dough; divide in half. Ross each half into rectangle. 18x9 inches. Roll up, beginning at short side. With side of hand, press each end to seal. Fold ends under loaf. Place seam side down in greased loaf pan, 9x5x3 inches. Brush loaves with salad oil. Let rise until double, about 1 hour.
Heat oven to 400 degrees F. Bank about 35 minutes or until loaves sound hollow when tapped.
yield 2 loaves
I use this basic recipe all the time for yeast rolls, different breads where I add things like parmesean cheese and garlic, etc. and this recipe makes a rocking good pizza dough. (look below for the instructions on how to make this into pizza dough) I have a pretty cold apartment, so I keep the resting/rising bread on the back of my stove and turn the oven on warm. When the recipe says it's ready to punch down if impression remains in today's words means poke your finger about an inch in the dough, if the hole stays it's ready.
Pizza dough. Use the above recipe. Instead of kneading it for 8 to 10 minutes, just knead it for about 3 or 4 minutes, put it in a greased bowl, turn it over so it's greased al over and cover to rise for between 5 to 30 minutes depending on how you like your pizza crust. Divide the dough up into three or four balls (one ball for each pizza) and let them rest for at least 5 minutes before pushing the dough out to the edges of a lightly greased pizza pan or cookie sheet. (be sure to grease your fingers a bit or it's difficult to work with).
Oh! there is one more trick to making great bread. It has to do with where you put the loaf pans in the oven. You want to bake loaves with the top of the pan in the middle of the oven. That tapping the bread to listen for a hollow sound works every time.
Have fun! Yummmmm I think I am going to go make some bread now.
