My hubby and I love cream corn, but we're sort of tired from the regular can. Any homemade recipes (you've tried) that you may recommend me? Thanks!

Up until my post, I see two recipes being offered for cream corn, but neither of them have any CREAM. Milk Corn recipes were not being requested.

At work, when I make 120lbs of cream corn, I use corn, cream, butter, salt, pepper, and sugar. I also take about 1/4 of the corn mixture and puree it. The natural starches in the corn will act as a thickener and give it a nice texture. I dont use any types of measurements sorry. But you are basically adding the cream and butter to get the texture and richness. Sugar will also enhance the flavor of the corn because corn has a great deal of sugar in it.

This is how I do it. Put about a cup full of frozen corn in a saucepan with some water. Bring to a boil and cook about 10 min. Add some milk, hard to say how much, until it looks the way you would want cream corn to look. That's vague, but when you've done it a couple of times, you'll know. Put about a tablespoon of corn starch in a cup; add a little water and mix it to blend. Slowly add to the corn mixture until it's the consistency you like. Add butter, salt and pepper to taste, and you're done!

Firstly you'll need a cream corn bush. They're rare, as the big Agricultural concerns tend to keep these sorts of things to themselves, but some nurseries sell cream corn bush seeds. Once it's grown and looks ready to harvest, you can cut the lobe of the ear that contains the juiciest and creamiest cream corn..
You put the lobes in a steamer for ten to fifteen minutes...don't let it burn, it tastes horrible. You can add brown sugar or honey to give it a little extra sweetness, and pour it over rice for a nutritious and fattening snack.

Take 4 or 5 fresh ears of corn on the cob - I prefer Silver Queen. Cut kernels from cob & then scrape cobs to release all the "milk". Place in skillet with a little bit of bacon grease or butter, milk, salt & pepper. Cook over medium heat stirring til desired thickness......Yummy!!
