Fry all round on a hot pan to seal in the juices then roast in the oven, time depending on the size of the joint.

Hi Biff,
We are looking at my favourite meat - lamb.
I do a mean rack of lamb, just stuffed in a 180 oven for about 45 mins, then left to stand fo 10 mins before carving it up.
Chops of lamb I would coat in a bit of garlic butter, wrap in foil, and bung in the oven at 180 for about 20 mins.

If your local farmer can deliver a whole lamb, as mine does, amazing things can be produced from all the bits.
My children have taken to Dad's "what is this" lamb, potatoe & coriander soup.
They love it.
OK, I get "what are you going to do with the legs" ?
Oh, I slice them & fry them in butter & garlic.
Nice in a sandwich.
No I am not frugal, but beleive in using things to their best advantage.
Overall - cook lamb very lightly, for not too long.
Nice & pink, and all is well.

Home made mint sauce, here we come !

fry 2 minutes on each side and this is for 2cm thick
