I would like to add that I plan to do a trip of 2 weeks, I ride a tandem with my wife and probably will take tent and sleeping bags with me as we will camp most of the nights if the weather is fine.

Traveling on Bicycle, I prefer a Trailer. I pull a Burley Nomad behind my tandem.http://www.burley.com/products/nomad.html
It holds everything I need, tent, Sleeping bags, clothing and supplies, (all are goodies) Best part is after you get moving ,you don't know it's there, it tracks and pulls great.
If you needed more room you can also add a cargo rack on the top.
Basically saddle bags on a bike are a waste, they just don't hold enough to bother with and all they do is make it harder to ride.

Guess it depends where you're going, how much kit, and your own preferences. I'd opt for front and rear carriers (or just latter really), as the bike remains fairly stable and controllable.
