Does anyone have a good recipe? My son is having a contest at school. The recipe I am looking for does not use real potaotoes. The ones that are sweet and covered in cinnamon. Thanks!

Irish Potato Candy

1 stick butter at room temp.
1 lb. confectioners' sugar (10 x)
1/4 c. heavy cream
1 or 2 tbsp. old Bushmill Irish
Whiskey
1 c. shredded coconut
1/2 c. confectioners' sugar
4 tsp. cinnamon

Beat butter, the 1 pound of confectioners' sugar, cream, whiskey and coconut together by hand or by mixer until well blended. Refrigerate 2 to 3 hours. Shape into walnut sized balls, sift the 1/2 cup of confectioners' sugar and the cinnamon onto a sheet of waxed paper. Roll candy in sugar cinnamon mixture and put in paper candy cups. More cinnamon can be added to sugar mixture if taste desires. Makes about 2 dozen.

1/4 c. (1/2 stick) softened butter or
margarine
4 oz. cream cheese, softened
1 tsp. vanilla
1 lb. box confectioners' sugar
1 (7 oz.) bag flaked coconut
Ground cinnamon

Cream butter and cream cheese. Beat in the vanilla and confectioners' sugar, then the coconut. Roll into balls the size of a walnut. Roll in cinnamon and refrigerate until firm. Makes 3 dozen.

READY IN 30 Min

INGREDIENTS
1/4 cup butter, softened
1/2 (8 ounce) package cream cheese
1 teaspoon vanilla extract
4 cups confectioners' sugar
2 1/2 cups flaked coconut
1 tablespoon ground cinnamon

DIRECTIONS
In a medium bowl, beat the butter and cream cheese together until smooth. Add the vanilla and confectioners' sugar; beat until smooth. Using your hands if necessary, mix in the coconut. Roll into balls or potato shapes, and roll in the cinnamon. Place onto a cookie sheet and chill to set. If desired, roll potatoes in cinnamon again for darker color.
