Probably a creme brulee or a souffle.... souffles are hard to make sure that they puff up all right when baked instead of sinking in the middle, and a creme brulee can get burnt very easily when torched.

I think all foods in general have a similar and basic background. Personally I think Asian meals such as Indian, Thai, or Chinese are the most difficult due to the time it takes to prepare all of the dishes and the amount of spices used in all of the cooking. I usually cook traditional Indian food and at minimum on a good day it'll take me at least an hour!

Actualy, everything is easy to cook. The difficult part is to make it well. Any food can be hard to prepare well and even harder to prepare great.

Something as simple as a fried egg can be as difficult as a souffle if your goal of culinary excellence for it is high enough.

For me.
its Fried Chicken

Because you have to measure the temperature exactly so the flour gets the that golden look that everybody likes
And so you have to see if it is fully cooked inside to make sure you don't get sick when you eat it
And............... the oil that splatters on you

Fried polenta for me. I can make the polenta fine, but when it's time to slice it and fry it, it always crumbles away. I've tried about every trick to keeping it firm, but it only turns out about 10% of the time.

Anything that is new to you is hard to learn at first. Then after several times of practice it gets easier. For me it is bread.
