how can i fry my chicken and pork on the stove without my whole house getting all covered with smoke????

I usually preheat my oven to 425 degrees and then I fry my chicken or pork on top of the stove for a few minutes, just long enough to be lightly browned. Then I put it in the oven for about 20 minutes or untill the meat is fully cooked. Of course you want to make sure the skillet can be used in the oven. I always use an iron skillet for this. You might need to turn the meat over once about halfway through cooking time so it doesn't burn on one side. When I cook it this way the meat always seems to come out more tender. Good luck!

First of all, what are you frying with? One of the biggest mistakes that people make is to fry with butter. Butter has a low smokeing point so you can't cook with it on a very hot flame. It is best to use an oil or shortening to fry with. Also, some pork cuts don't even need oil bacause they will produce enough grease on their own.

Also, try frying on a lower heat. It doesn't have to be on high to fry.

When it comes to chicken, it realy works well to fry it a little on both sides at high heat then bring it down to medium and cover with a tight fitting lid.
