They are probably just protecting their territory and who ever said that ducks don't hiss only geese do, was wrong. Both Geese and Ducks will hiss when a predator comes too close, mostly during breeding/egg setting time

Umm.. Muscovies hiss because they can't quack. Seriously. So, if you're feeding muscovy ducks, and one hisses at you, it's the muscovy equivalent of a quack.

If a goose or swan hisses, it's because they're mean.

Wild ducks hiss at you any time that they feel you are invading their territory, could be harming their young,etc.
