I've personally tried this recipe before, makes a yummy and moist carrot cake!!
1 cup KRAFT Mayo Real Mayonnaise
1 pkg. (2-layer size) yellow cake mix
4 eggs
2-1/2 tsp. ground cinnamon
2 cups finely grated carrots
1/2 cup chopped PLANTERS Walnut Pieces
BEAT mayo, cake mix, eggs, 1/4 cup water and cinnamon in large bowl with electric mixer on medium speed for 3 minutes. Stir in carrots and walnuts.
POUR into greased 13x9-inch baking pan.
BAKE at 350°F for 30 to 35 minutes or until toothpick inserted in center comes out clean. Cool completely. Frost cake if desired.

Most carrot cakes that I have had were topped with cream cheese frosting, very yummy!!
I've also tried a similar recipe to this one more "from scratch"
2 cups flour
2 teaspoons baking powder
1 1/2 teaspoons baking soda
1 teaspoon cinnamon
1 teaspoon salt
2 cups sugar
1 1/2 cups oil
4 eggs
2 cups grated carrots
1/2 cup nuts (any you like and only if desired 1 8 oz. can crushed pineapple Ice with Cream Cheese Icing: 1/2 c. b)
Icing:
3 ounces cream cheese
1/2 cup butter
2 cups icing sugar (or more to your taste)
1.Sift together first"5" ingredients.
2.In separate bowl, mix together, sugar, oil and eggs together, well.
3.Add dry ingredients to wet.
4.Stir well.
5.Add pineapple and nuts. (optional)
6.Cook in 350 degree oven for 40- 50 minutes.
7.Ice with Cream Cheese Icing:Cream butter, cheese and vanilla together.
8.Add sugar gradually.
9.Add a touch of milk if needed.

CARROT CAKE (VERY MOIST)

1 c. raisins (omit if desired)
ICING:
3 oz. pkg. cream cheese, softened
1/2 stick butter, softened
1 tsp. vanilla
1/2 box powdered sugar
Blend the oil and sugar together and add eggs 1 at a time. Sift the dry ingredients together and add to batter. Blend in the carrots and raisins and mix well. Pour into a greased 9 x 13 inch pan and bake at 325 degrees for 40-60 minutes. When cool, top with cream cheese icing. Blend all ingredients well until fluffy.
