The method for making cheese from milk is a form of "processing," but more processing can happen to a cheese after that which can make it even more "processed."
Also, some cheeses are called "Process Cheese Food," or Spread, and those have been even more processed by adding or removing things, so you're getting farther and farther away from "natural" cheese.

yes. depending on the kind of cheese, the milk (either cow, goat, etc) is processed. some cheeses take longer to make/mold depending on how long it has to age. the older the cheese is, the better (and stinkier) it is.

It wouldn't be cheese if not processed. Most of them take "ages" in special cellars to ripe (especially in France/Italy/Switzerland) to become what they are apart from the so called fresh one's!

oh yeah, because some of the beef patties has extenders on it to make it looks more meatier & has longer storage life
