I made a lovely smoked ham and still have quite a bit left over.
We had it with mashed potatoes and veggies, on sandwiches, I also made a navy bean ham soup...I have wrapped and frozen some slices..what can I make with the rest ?? Any ideas* Thanks for your input~

BAKED DENVER SANDWICH
Serves 4, can be halved or doubled
Prep time: 20 min.
Baking time: 35-45 min
Oven temp: 375*

8 slices buttered bread
1/4 c Cheddar cheese, shredded
1 c ham, ground in food processor
1/4 c chopped bell pepper
1 Tbsp green onion, chopped
3 eggs, lightly beaten
2 c milk
1/2 tsp salt
Dash cayenne pepper or hot sauce

Trim crusts from the bread. Arrange 4 slices, buttered side down, in a 8 or 9" square pan (use a 9x13" pan if you are dob ling the recipe). Sprinkle with ham, cheese, bell pepper and onion. Top with remaining slices of bread, buttered side up.

In a small bowl, combine the eggs and milk with the salt and pepper. Pour over the sandwiches in the pan. Use a pancake turner to press down each sandwich.

Bake at once OR cover and refrigerate for up to 8 hours. Bake, uncovered, at 375* for 35-45 min., until egg mixture has set and the sandwiches feel warm to the touch.

This is my husband's most favorite casserole - there are times I think he suggests getting a ham just so we can have this! Hope you will agree. Cyn's Ham and Rice Casserole 3/4 c. long grain rice 1/2 c. chopped onion 2 T. oil 2 c. cubed ham 1 can green beans, undrained 10 1/2 oz. can Campbell's beef broth bouillon Cook rice and onion in oil till rice is lightly browned, stirring frequently. Add ham, undrained beans and broth. Stir well; heat to boiling. turn into a 2-qt. casserole dish. Cover and bake at 350F for 45 minutes, or rice is done. Check to make sure it is not too dry; if so, add a little water. Stir well just before serving. Serves 3-4. Note: If the whole family comes home, I have to double or even triple this dish!

I like to make a white pizza with ham and asparagus. I make a homemade crust, but you can but ready-to-ues ones to use instead. And I use an Alfredo or white cheese sauce sometimes if I don't feel like fussing with making the white sauce myself.

I cut the ham in bite-sized chuncks and cut the asparagus in about 3/4 inch picecs, then lightly blanch the asparagus. I then top the pizza crust with sauce, add the ham and asparagus and top with just a bit of parmesan and bake like usual.

Either quiche or a ham pot pie is wonderful. If you make a pot pie get a premade pie shell......put in cubed ham, mixed veggies, 1 can cream of chicken soup, 1 can cream of mushroom soup, milk then cover with pastry crust and bake. 350 for about 1 hour.......your family will love this. If you make a quiche......start with pie crust.....add beaten eggs, ham, hashbrowns, cheese, salt, pepper, scallions, then bake at 350 for about 45 min. or until done!! Now there is a good way to eat ham. You can also grind it up in your food processor with mayo, sweet pickels, onions, salt, pepper, red bell peppers and make a wonderful sandwich spread!! No end to left over ham!!!

When I have left over ham, I make a ham spread for sandwiches or to put on crakers for a treat or snack.
If you have a meat grinder, grind together your ham, some cheddar cheese, and sweet gerkin pickles. Add mayo and a little ground pepper and mix together.

My husband loves for me to make scalloped potatoes and add the ham to the potatoes. It's his favorite dish from when he was little. If you're in a hurry you could use the boxes of scalloped pototatoes for a really quick and easy meal.

- Add cut-up chunks to macaroni & cheese.
- Make an omelette with ham, onions & cheese.
- Make a cold or warm salad with chopped tomatoes, beans & ham.
- Make a pasta cream sauce with ham & frozen peas.

Use some in an omlette:

Ham/Cheese Omlette

1 cup diced ham
1 cup shredded cheese (jack or cheddar or mix)
1 tablespoon gr onions chopped

Beat eggs until foamy, add salt and pepper, pour into greased pan on med/low heat, when set turn fill with ham cheese and green onions, let set for a minute or two to melt cheese, fold, plate and enjoy.

Ham salad is great or you could make a cheesy potato casserole with the ham in it. Gives the potatoes flavor & tastes great.
