I have a recipe for an eggless cake which makes an 8" round and 2 " thick cake i need to make it bigger, do i double the ingredients for this? What about the bake time and pan size?

Just double the ingredients of the normal recipe calls for.

With an egg less or any cake I wouldn't double it , mix up 2 cakes . It just won't make a good cake other wise . It might take longer but will taste better . don't over fill your pans , they will over flow & make a mess in your oven . More work . follow directions for filling the pans .since it only makes one 8" round 2" thick cake just make a 2 layer cake

I add a packet of dream whip powder for each cake , just the powder no extra loquid , This made my cakes biger & moister .I learned this trick from a cake makeing & decorating teacher . She mades cakes for weddings & other partys

Doubling doesn't always work well... sometimes doubling a recipe doesn't require you to double the eggs, for example, or the butter... sometimes it does. Who knows.

Since yourcake is eggless, I'd make the cake twice, and bake it in 2 separate pans.

Since it's round, you should just get a second pan, bake a scond cake. buy twice as much icing; Make sure to let the cakes cool completely, then make it two layers. Very good, just put lots of icing in the middle and on top; Very pretty, too!

I know that you double the ingredients. And obviously use a bigger pan. but don't double the cook time. Increase it and then use a toothpick stuck in the middle of it to see if it's done. You probably know this, but I'm going to go through it anyways. If the toothpick is clean, it's done. If it comes out w/ food on it, cook it longer. Just keep an eye on it.

make it a 2 layer cake, and prepare the batter twice and bake it in 2-8" pans

Well if you need to double the recipie than you double everything in the recipie you will need 2 8" round pans for it if it only calls for one if it already calls for 2 than you will need 4 of them

mmmmm someone is making a wacky cake.
damn I love that cake. at least that's the name i've always known it to be.
If you have about a 10 x 14 pan,or larger, that should work on a double recipe.

yes double all of the ingredients enlarging the pan size would definitely help. as far as the time keep an eye on it and when you put a tooth pick in the middle and it comes out clean then it's done.

I think you can double everything except the salt- don't double that
