My husband makes this one and it is really great - and it is super easy.
Cut the squash in half and clean it out. Fill cavity with bulk sausage. (He uses Jimmy Dean breakfast sausage - my favorite is the one with maple flavoring.) Put squash in a shallow baking dish and bake at 350 degrees for about one hour or until squash is soft and meat is done.

If you want to use the squash as a side dish try twice-baked, stuffed squash.
2 medium acorn squash
1-1/4 cups chopped cooked spinach (or one 10-ounce package frozen chopped spinach, thawed and well drained)
1/3 cup grated Parmesan cheese
3 slices bacon, crisp-cooked, drained, and crumbled
3 tablespoons butter, softened
1 green onion, thinly sliced
1/8 teaspoon salt
1/8 teaspoon ground red pepper
2 tablespoons soft bread crumbs
1 tablespoon grated Parmesan cheese
Halve squash lengthwise. Remove seeds. Place squash, cut side down, in a large baking dish. Bake in a 350 degree oven for 50 to 55 minutes or until nearly tender.
Scoop out squash pulp to make 1/4-inch-thick shells. In a large mixing bowl combine squash pulp, spinach, the 1/3 cup Parmesan cheese, bacon, butter, green onion, salt, and red pepper. Fill the squash shells with the squash mixture. Combine the bread crumbs and the 1 tablespoon Parmesan cheese; sprinkle over squash.
Return filled squash halves to same baking dish. Bake, uncovered, for 25 to 30 minutes or until heated through.

if you like experimenting, here is one for you... I don't have exact measurements as it is my grandma's original and she never writes anything down!
She basically halves the acorn squash and fills them with the following:
minced onion (dry is fine)
finely chopped green pepper
shredded cheddar cheese
bread, torn into small squares
and tomatoes (she has used canned stew tomatoes and fresh -either works)
Mix all those up into the ratio you like.
Fill squash halves with mixture.
Put in baking dish and add a square of butter on top of each half.
Bake until done... I usually bake at 350 and keep checking them until they're done (45 mins- 1 hour)
(Save some cheese to sprinkle on top during the last 5 minutes of baking).
This isn't as sweet as the cinnamon recipes, but it is DELICIOUS. (also not for the health junkies, but so worth the extra calories).

Japanese Boiled Acorn Squash
1 pound (0.5 kg) acorn squash, seeded and cut in 2 inch (5 cm) squares
1.5 cups water
1/2 tsp hon-dashi powder
2.5 tbsp sugar
1 tbsp mirin
1.5 tbsp soy sauce
Shave off the skin in spots on the squash to make it look decorative
and give the broth flavor a chance to permeate.
Combine water, hon-dashi, sugar and mirin in a saucepan, add squash
pieces and boil covered 7-8 min, turning the pieces once halfway
through cooking.
Add soy sauce and boil covered 7-8 min longer or until tender,
turning pieces again halfway through.
The original recipe suggests that you can add ground pork to this
too, though I haven't tried that. Enjoy!
Fruit-Glazed Acorn Squash
2 small acorn squash (about 2 pounds)
3/4 cup unsweetened pineapple juice
3/4 cup unsweetened orange juice
1/4 cup currants
1 1/2 Tablespoons brown sugar
1 Tablespoon cornstarch
1 1/4 teaspoon ground cloves
Prick squash several times with a fork. Place squash on two layers
of paper towels. Microwave, uncovered, at high 5 to 6 minutes or
until slightly tender. Let cool. Cut ends off squash and discard
seeds, slice into 1-inch thick slices. Arrange squash slices in
a 13 x 9 inch baking dish. Combine pineapple juice and remaining
ingredients, stir well. Pour over squash slices.
Bake, uncovered, at 350 for 35 minutes or until squash is tender,
brushing frequently with glaze.

this is the bomb baby. okay you split it in half take out the seeds but half a stick of butter in each hole. then let it back till the butter is melted then take it out and cut up an apple in slices put about 3 to 5 slices in each hole and continue to cook till its soft. then once done take the apples out poke holes in the squash so the butter and apple juice soaks into the squash. let it sit for about 15 to 30 minutes so it can soak.
