Mix creme cheese, chives salt and lemon pepper.
Spread the cheese on a serving dish.

Cheese Sauce
Serve hot over lightly cooked vegetables, chicken or fish. Makes about 1 1/2 cups.
3 ounces cheddar cheese
2 tablespoons butter
2 tablespoons all-purpose flour
1/2 cup milk
1/2 cup milk or vegetable cooking water
1/2 teaspoon prepared mustard
1 teaspoon instant chicken bouillon granules or 1 crumbled chicken bouillon cube
3-4 drops hot pepper sauce
1/4 cup dry sherry
Grate cheese to equal 3/4 cup; set aside. In a small heavy-based saucepan, melt butter. Add flour and stir continuously over medium heat until bubbly. Combine milk with vegetable water, if using, or additional milk. Using a whisk, gradually pour into saucepan.
Use a wire whisk to combine into a creamy sauce. Add rest of ingredients except the cheese, and stir gently until sauce boils and thickens.
Add cheese, stir until melted through.
Transfer to a gravy boat and serve hot.

I'll give you my favorite and most enjoyed dip recipe. It's similar to the first one. I like to brown one Pound (or more) of hamburger. I add some garlic powder or garlic salt, chili pepper, seasoned salt and some pepper when browning. I then get the 1lb block of Velveta cheese and cut into cubes. I add a layer of cheese to the bottom of my slow cooker, add the hamburger, dump in a jar of salsa then add the rest of the cheese. Stir and let melt. You can also add other peppers or seasonings to your liking.

My favorite cheese dip is :
Chili Cheese Dip
1 pkg of Velveeta (small pkg.)
1 small can of chili (Hot)
Cube cheese in a microwave safe bowl and pour in chili. Microwave on high, stirring about every 2 minutes until hot and bubbly and cheese is melted. Serve with tortilla chips or Big Fritios.
Note: You can add all kinds of stuff to this dip, depending on what you like. I add green onion to mine, or you can add corn, black beans, cubed beef, jalepenos, or what ever.
