Its pretty simple really. I make two different ones, but the technique is the same.
Use approximately 12 to 15 dried whole cayenne peppers. Process to fine powder. Take one pint of your favorite extra virgin olive oil, and dump in pepper powder. Heat gently on low or place in hot sun till oil is nice and warm. Store for 30 days or so. Filter through a cheese cloth, and pour back in bottle.
I use this oil for fried potatoes, philly cheese steaks and in chinese cooking.
This also works with sliced garlic. (two whole bulbs) or dried various herbs.

2 c Good olive oil
1 tb Black peppercorns
3 Fresh bay leaves
3 Dry chiles (i.e. japones),
-including seeds
3 Branches fresh thyme
Bottles of olive oil containing red chiles, black
pepper- corns and the wild herbs of the region sit on
the table of every pizzeria in Provence. When the thin
crusted pizzas come hot to the table, the first thing
to do is sprinkle the hot pepper oil on them.
Pour the olive oil into a clean, dry wine bottle, then
add remaining ingredients. Cut 1/4-inch deep, V-shaped
channel the length of a wine cork and use it to cork
the bottle.
Let stand in a cool, dark place for 2 to 3 weeks to
let the oil become infused with the flavors. Stored in
a cool, dark place the oil will keep several months.
Uses: This is wonderful sprinkled on almost any pizza,
from traditional ones such as quatre fromage or
nouveau types such as goat cheese with scallops.
Makes 2 cups.

carbohydrate, 14 g fat, 0 mg cholesterol, 0 mg sodium,
0 g fiber.

Flavored Olive Oil
Flavored oils are great for stir-fries, salads, or on bread. Use any jar or bottle with a tight-fitting lid.
Ingredients
2 to 4 cups olive oil (depending upon size of jar)
3 to 4 whole cloves garlic
3 to 4 sprigs fresh rosemary
Preparing
Place the oil, garlic, and rosemary in a clean pint or quart jar, pouring oil to within 2 inches of the rim. Allow the oil to stand for at least a few hours and strain before using. The longer you let it stand the stronger the flavor will be.

1 or 2 Jalapeno peppers

Its better to use ginger oil,sunflower oil, corn oil. using less oil is very good health any how.
