Mix together:
1/4 cup white vinegar
1/2 teaspoon sugar
1/2 teaspoon mustard
1/4 cup cold water
1 tb olive oil
pepper to taste

Adjust vinegar / sugar ratio to taste, I'm guessing amounts here as I just pour...

Balsamic Vinegar and olive oil, with pepper to taste is really great, too.

traditional balsamic vinegar will make a sweeter dressing.
