Sure, there's only silicone caulking holding them in place.Have a granite counter installer give you a price on removal and storage/re inst. Make sure your new cab man knows that you'll be using granite counters there's a few things he'll have to do for support.

Anything is possible. If the layout of the cabinets isn't changing much and the granite is removed carefully, I suppose it could be done.
Ask a professional. Call up a kitchen center and ask if you can use the same countertops. It seems to me that it is possible to do.

I'd certainly try it if I had the counter top. You may have to adjust your needs to fit the solution...the shape of the counter top may not suit the new shape.
There are new types of circular saw blades that will cut the counter top. Or a carpenter for hire may be your solution.
