Just wondering why you have to brew coffee with cold water? why does it matter cold or hot?

If you start with hot water, then process it through a machine that is designed to heat that water to high temperatures quickly by the time it reaches the coffee grounds it is so hot it burns them and you end up with bitter tasting coffee. I know, I tried it and it was awful.

If you mix coffee with hot water, the molecules inside the coffee will ''melt'' or ''destroyed'' so the powder becomes one with the water. And the molecules are ''taste-molecules'' that give the coffee its taste.

It's because if you keep hot water,the coffee will melt not dissolve not giving it that delicious coffee taste.
