I'm buying new bedding for my sons bed. His crib tranforms into a day bed, so it's also a toddler bed. Can I buy toddler bedding? Will the sheet fit the mattress?

I have the same type of crib that turns into a day bed. We bought toddler bedding and the sheets fit. He is really into Thomas so we got him Thomas The Tank Engine toddler bedding. The elastic sheet fits the bed perfectly and the sheet that you spread out on the bed, along with the blanket, go over the side a little bit. (which is what normal bedding does) So I would say that the toddler bedding definately fits.

Yes you can, if you need the size, just get the same size sheets that you bought for the baby crib- the mattress stays the same so just change the patterns/ themes for the bedding to make it "fun" for the toddler. That's the beauty of those convertible cribs- very cost effective when changing beds... just get new bedding and viola! new bed! and it keeps it familiar to the toddler so it's not a complete shock when the crib disappears. the sheets will fit the mattress if you get the baby mattress size (i think twin might fit... it's the smallest in sizes up from crib specialized sheets)
