certain vegetables emit a certain amount of sulfur after they have been cooked. There would be a chemical reaction with trhe mertals in the can and the sulphur from the vegetables. Vegetables like brussle sprouts and broccoli can not be canned.

Probably because the metallic taste of the can wouldn't complement the almost-yucky taste of broccoli. Broccoli is just one of those things that is meant to be eaten fresh. It's not that complicated to cook after all.

Canned foods are cooked in the can to kill bacteria. The temperatures and time needed to cook the broccoli would turn the food into an unappetizing mush.

It would be soup. I hate asparagus in a can so I know broccoli is a no go.

Broccoli can't be preserved in a can,it would go soggy.

That's a good question. Maybe because some things loose vitamins when canned.

Certain vegetables just don't hold well when it's canned unless they are puree.
