Probably should have stocked up on it years ago when it was cheap and easily found on store shelves and cornered the market...

I saw red saffron in a health food store, but no yellow...maybe that is more common one?

I used to be able to buy yellow rice packets and I think that was saffron too.

Real dried saffron is reddish in color - when you cook with it it turns whatever you are cooking yellow. The yellow rice mix you bought probably had some saffron in it, but saffron has always been the most expensive spice in the world. Ground saffron is not popular anymore - it loses it's flavor too quickly and was often mixed with turmeric which gave it more of a yellow color. That being said (and not knowing where you live) Trader Joe's sells saffron for around $3 a gram. I have also found saffron fairly inexpensively at stores that specialize in Middle eastern food.

You can grow saffron. The plant is Crocus sativus, it is an autumn blooming crocus. Once the crocus blooms you can pick the stamens - but keep in mind it would take over 100 flowers for a gram and I use about 1/2 a gram for a good paella, yellow rice or risotto.

You may be confused. Real saffron was never cheap and plentiful. It is the stigma of a particular type of crocus. Each flower has only three stigmas and these must be picked by hand. This is expensive and, in fact, saffron is the most expensive spice in the world.

You are almost always better off buying saffron through the Internet as the stuff in your local megamart is probably old and adulterated.

Perhaps you were confusing turmeric with saffron. Turmeric is a cheap spice that will produce the yellow color, but not the flavor, of saffron.

They still grow yellow saffron. Keep in mind, that saffron is the pistils from a flower that only blooms at night. Due to the high cost, a lot of markets keep it under lock and key like high end wine. Ask the store manager.
