Buy yourself a roast, preferably a chuck roast because it has more fat content, put it in the crock and fill it until water covers the top of the roast, cook it on low all day while you're at work or doing whatever else, when you get home the meat should be tender enought to just pick it apart with a couple of forks. Once you've done that kick the heat up to high and add sliced carrots, sliced potatoes, fresh peas, onion, and any other vegetables that you like and let it cook for about an hour. you can add garlic, onion powder, salt and pepper to taste

this recipe also works very well with deer meat

if you'd like it to cook a little bit faster you can cut the meat into stew sized chunks in the beginning, that will cut the time down by half

2-3 lb veal or lamb breast
2 tb chicken boullion mix (or 1 qt water or broth)
1 ts nutmeg
1 ts ginger, powdered
16 whole cloves
1 carrot, chopped
1 c grapes (optional)

Cut the meat as needed to fit in the crockpot, removing as much
fat as possible. Now toss in the rest. Cook on high for 4 hours,
then cool it and skim off the fat. Reheat and it's good heated
for 6 hours at a shot for 2 days. (refridgerate inbetween times!)

Serves well with an acorn or buttternut squash, cut in half and
baked then served in a bowl with the shell filled with meat and
soup. Add rice (Basmati or Jasmine prefered) and some blue lake
green beans for a perfect but easy meal.

You can make a meat stew in the crock pot with virtually any meat. I have used london broil and then also used plain ole chuck. I usually slice the meat into cubes prior to cooking. Place the meat cubes in crock pot. The added ingredients are pretty much up to your taste. I usually dice raw potatoes, celery, carrots and onions. Add the diced veggies to the meat in the crock pot. Take a packet of aujus mix and add it to water until dissolved. Pour the aujus mixture into the crock pot adding extra water until ingredients are covered with liquid. Cook on low for the entire afternoon. If you are in a hurry or on a tight budget, you can just buy several cans of mixed vegetables - there are several of them that contain potato, celery, onion and possibly green beans. Pour the canned mixed veggies in the crock pot and at the aujus mixture. There is also usually packages of already cubed meat in the meat dept. That really saves time and money.

I like this one:
Chicken Stew Mexican Style Recipe

2 lbs skinless boneless chicken breasts cut into 1 1/2" peices
4 med russet potatoes, peeled and cut very small
1 (15 oz) can mild salsa
1 (4 oz) can diced green chilies
1 (1 1/4 oz) pkg taco seasoning mix
1 (8oz) can tomato sauce

Mix all ingredients together in crockpot, cook 7-9 hours on low. Serve with warm flour tortillas.

I also served corn with this. It was good mixed in it too.

Use vegetables on hand for this tasty slow-cooked beef stew. The condensed beef broth keeps it flavorful, and the wine adds a little zing. If you don't have the wine, more beef broth or water will work fine.
INGREDIENTS:
1 1/2 to 2 pounds stewing beef, cut in 1/2 to 1-inch cubes
2 to 3 medium potatoes, cubed
1 medium turnip, cubed
1 cup sliced carrots
1/2 cup chopped onions
1/4 to 1/2 cup sliced celery
1/2 to 1 cup sliced mushrooms
1/2 cup butter beans or lima beans
1 can (10 1/2 ounces) condensed beef broth
1/4 cup red wine
1/2 teaspoon salt
1/4 teaspoon pepper
pinch thyme
3 tablespoons flour blended with 1/4 cup water
1/2 cups frozen mixed vegetables, corn, or peas, optional
PREPARATION:
In slow cooker, combine beef, potatoes, turnip, carrots, onions, celery, mushrooms, butter beans, beef broth, wine, salt, and pepper. Cover and cook on LOW for 9 to 12 hours, or on HIGH for 5 to 6 hours.
Add thyme and frozen vegetables, corn or peas, thawed if using.
Pour liquids in a meduim saucepan and simmer to reduce slightly.
If desired, skim off excess fat.Add flour and water mixture and simmer until thickened.Add back to vegetables and continue cooking on LOW until serving time.
