I want to make some savoury muffins (yum) but only have some eggs which, when I put them in cold water float rather than sink (which i read means that they are fresh and ok to use).
I can't be bothered going to the shops because I have to go to work soon, but still want to make some muffins to take with me.
So can I use the bad eggs in my muffin recipe seeing as though they are going to be cooked anyway?

This test is an old wife's tale.

Crack the egg is into its own bowl. Smell it, look at it, then decide.

If the egg stay at the bottom - it is fresh.

If the egg is at an angle on the bottom - it is still fresh and good to eat.

If the egg stands on its pointed end at the bottom - it is still safe to eat but best used for baking and making hard-cooked eggs.

If the egg float - they're stale and best discarded.

But if it smells or looks funny once you crack it, don't mess around with it. Just throw it out. If you are unsure about the eggs you are using, its best to crack them into a seperate bowl before adding it to the other ingredients so if it IS bad it won't ruin the rest of the ingredients.

Just t add confusion- freshly laid eggs contain a large amount of carbon dioxide which can cause them to float.

Dissolve 4 teaspoons of salt in 2 cups of water. An old egg will float in this solution, and a fresh one will sink. If the egg hovers somewhere in the middle, it's not particularly fresh, but is certainly safe to eat.

The test works because as an egg matures, it loses water, and the air bubbles inside expand, making it float.

If there is no mold then yes you can eat them normally or bake with them, because listeria and salmonella is both killed at 160°. However, floating does not mean it is has - sole eggs are that way when they first come out. It is a result of how "full" the shell is with egg, so when an egg goes bad it may float because the white turns watery, but a brand new egg may also float.

Just because they float doesn't mean that eggs are bad. It means that there is air inside the shell. To be sure, crack each egg by itself, into a cup or bowl and smell it. Believe me, if it is a bad egg, it will stink. If it doesn't smell bad, it should be okay to use. In future, try not to keep them around so long, after all, eggs are good food to enjoy. Best wishes

Have you ever heard of salmanella?
Well its an extremely viscious form of food poisoning
you can get from poultry products.
If you have had these egg's hanging arround for
a while don't risk it, throw them in the bin, otherwise you could find yourself in hospital.
buy a muffin today and get some fresh eggs on your way home,
It cost's less than a couple of weeks in hospital.....

My husband is a Poultry Farmer. Never, ever use bad eggs, even in cooking. Crack them open....do they smell??? If they do then toss them! If they smell OK, then they should be right. But, honestly, eggs are cheap. Why risk it? Just buy some new ones!

DON'T even think of using bad eggs in cooking as they can cause serious food related sickness, and also give bad odour and taste to the food; trust me its a waste of ur cooking time and ingredients also added doctor and medicine bills.Make a choice.

Do the eggs have a smell to it or do the eggs look differently when you cracked them?
If they looked and smelled fine, then they must be good.
