Beer Battered Shrimp With Chipotle Dipping Sauce

oil for frying
dipping sauce:
1/2 cup soy sauce
1 tablespoon chipotle pepper -- in adobe sauce
1 tablespoon ginger minced
3 tablespoons lime juice
1 tablespoon mirin
batter:
1 1/2 cup all-purpose flour
1/2 cup cornstarch
1 tablespoon salt
1 lite (12-ounce) beer
1 pound (21 to 25 pieces) shrimp -- peeled and
deveined
Preheat oil to 365 degrees.
In a small bowl, whisk together all the dipping sauce ingredients.
Transfer to a serving bowl, cover and set aside.
In a medium size bowl, combine all the dry ingredients for the batter.
Slowly, whisk in beer, until combined. If not using right away cover
and refrigerate for later use. Gently toss shrimp in the batter, to
coat. Shake gently to remove excess batter and with slotted spoon,
carefully fry in hot oil for 5 to 6 minutes or until golden brown.
Cook in batches to avoid over crowding. Remove shrimp with a spider or
slotted spoon and place on paper towels to drain. Serve hot with
dipping sauce.
Yield: 4 servings

Cayenne Shrimp with Lemon

2 cups cooked instant rice
1 pound medium shrimp -- shelled and deveined
2 tablespoons margarine or butter
1 teaspoon paprika
1/2 teaspoon salt
1/4 teaspoon ground red pepper -- (cayenne)
2 tablespoons lemon juice
lemon wedges
Cook rice according to package directions, but omit salt and margarine.
While rice is cooking, spray large nonstick skillet with nonstick cooking spray
. Heat over medium0high heat until hot. Add shrimp; cook 2 to 5 minutes or un
til shrimp turn pink, stirring frequently.
Reduce heat to medium-low. Add margarine, paprika, salt and ground red pepper;
cook and stir to melt margarine and coat shrimp completely. Add lemon juice;
stir to blend thoroughly.
To serve, arrange cooked rice on serving platter. Spoon shrimp mixture over ri
ce. Serve with lemon wedges.

Easy Shrimp Creole

2 tablespoons butter or margarine
1/3 cup chopped onion
2 tablespoons buttermilk biscuit mix
1 1/2 cups water
1 6 oz can tomato paste
1 teaspoon salt
dash pepper
1/4 teaspoon sugar
1 bay leaf
1/2 cup chopped celery
1/2 cup chopped green bell pepper
2 pounds frozen shelled shrimp -- thawed and cleaned
or
3 5 oz cans shrimp -- rinsed and drained
fluffy rice
serves 6
In skillet, melt butter; add onion and cook slightly. Add biscuit mix and stir
until well blended. Combine remaining ingredients except shrimp and rice and
add with onion mixutre to Crock-Pot; stir well. Cover and cook on Low for 7 to
9 hours.
One hour before serving, turn to High and add shrimp. Remove bay leaf and serv
e over hot fluffy rice.
Double recipe for 5-quart Crock-Pot.

Coconut shrimp- it is sooooooooo GOOD!
You'll need shredded coconut/coconut flakes (sweet coconut tastes better)
Eggs (Could be 2, it all depends on how much shrimp you're cooking)
Seasoning
Flour or breadcrumbs
Shrimp- clean, peeleed, shell-less, de-veined
1. Season the shrimp and mix a little of the flour/breadcrumb wit a lot of the shredded coconut
(Preheat pan)
2. Dip shrimp in beaten eggs then dip in flour/breadcrumb and coconut mixture
3. Fry in hot oil (not too hot, so lower your stove's heat if needed), fry on both sides till browned, this should take ALMOST 10 mins depending on how big the shrimp is etc.
Garnish with lemon wedges and tartar sauce is a very nice side to go with it...
Recipe for Tartar sauce (1 Cup)
Tartar Sauce:
2/3 cup mayonnaise
1/4 cup sweet pickle relish
Freshly squeezed juice from 1/2 lime (about 1 tablespoon)
Dash of black pepper
Stir together the mayonnaise, relish, and lime juice. Chill for 10 minutes. Serve.

Quick & Easy Shrimp
Serve with French bread
2 lbs. fresh shrimp, cleaned and deveined
1/4 cup extra virgin olive oil
4 cloves garlic, chopped
1/2 cup chopped Italian parsley
1/2 cup dry white wine
salt and pepper to taste
1. Saute garlic in olive oil over medium heat for about 3 minutes.
2. Add parsley and shrimp. Cook for 2 minutes longer.
3. Add dry white wine. Cook until shrimp are done about 5 minutes more.
4. Add salt and pepper to taste.
This will make 4 servings.

SHRIMP TOAST CANAPES
1 lb. raw shrimp, peeled and deveined
1 green onion, minced
1/2 tsp. salt
1/4 tsp. garlic powder
A few dashes hot sauce
1 1/2 tsp. lemon juice
1 egg white
12 thin slices white sandwich bread, crusts removed
2 tbsp. butter, melted
Shell and devein the raw shrimp. Chop shrimp and combine with minced onion. Put into a bowl and add the salt, garlic powder, hot sauce and lemon juice. Mix until well blended. Add unbeaten egg white, mixing it in well.
Put bread slices under the broiler (or in a toaster oven) until toasted on one side. Turn over and spread untoasted side with the shrimp mixture. Just before serving, brush the top of each slice (on top of the shrimp mixture) with butter and broil for four minutes until shrimp topping turns pink. Cut into quarters or triangles to serve. Makes 4 dozen canapes.

This is tasty and easy. Take a package of linguine noodles and boil add the shrimp and Ragu Garlic Parmesan Sauce. Make sure your shrimp are deveined and precooked. If they are not add them for a few minutes with the noodles.

tequila lime shrimp
1 lbs large shrimp
1 cup tequila
3 tbs oldbay
the zest of 2 limes as well as juice
salt and pepper to taste
water soaked swewers
mix the tequila zest and juice salt and pepper and old bay in a bowl peel and devein the shrimp and add to the marinade let set in fridge for 10-15 min they will begin to cook take out of fridge and place on to the scewers as many as you want to fit then grill its fantastic for a small party with friends

Manchurian Shrimp (Garlic Flavored Shrimp):
50 min 30 min prep
6 servings
1 1/2 lbs shrimp (16-20 per pound)
1 teaspoon cornstarch
1 teaspoon ginger paste
1 teaspoon garlic paste
1/2 teaspoon white pepper
salt
1/2 cup chopped coriander
1 egg, slightly beaten
oil, enough to deep fry
SAUCE
2 teaspoons vegetable oil
1 teaspoon chopped garlic
2 tablespoons chopped coriander
2 tablespoons chopped scallions
1 teaspoon chopped green chilies
1 teaspoon tomato paste
1/2 teaspoon sugar
1 teaspoon white vinegar
1 teaspoon soy sauce
salt
1/4 teaspoon black pepper
1. Wash, peel and devein shrimp (leaving tail on gives more flavor).
2. Place in large bowl.
3. Mix in corn starch, ginger paste, garlic paste, pepper, salt, coriander and egg.
4. Heat oil.
5. Deep fry shrimp to golden brown.
6. Spread out on paper towels to drain oil.
7. Sauce.
8. Heat wok on high heat and add oil Saute chopped garlic, coriander, scallions and chilies for about two minutes.
9. Add tomato paste, sugar, vinegar, soy sauce, salt, pepper.
10. Bring to boil.
11. Toss the fried shrimp in the sauce.
12. Remove from heat and serve.

take shrimp
wash em and clean em
then take egg white
and put the shrimps in it
add salt
pepper
and red spices (really zesty)
if you want add 1 table spoon of ur fav salad dressing
and if ur a risk taker try 2 table spoons.
mix it together
and fry em in a frying pan
U can always add vegetables of your choice
(its best to cook in low fat oil..or less oil)

a favorite at our house is using both shrimp and crab meat (either real or imitation) mix them into any flavor of alfredo sauce and serve it over any type of noodles your family enjoys
