Because green means "go" and those in the green room are ready to "go" onstage. The room can be any color or decorating scheme. It's just a term for the purpose of the room, to get the people ready to "go" on.

This dates back to Shakespearean theatre where actors prepared in rooms filled with plants. It was believed that the moisture from the plants was good for the actors voices.

I think it's because green is better than any other colours... that's why they term it green room...
