My fav is to put the brie inside puff pastry {available in frozen section of store with pie crusts} on top of the brie put walnuts, slivered almonds, pine nuts, or pecans {I toast them first in a dry cast iron skillet}, then maybe some melted apricot or peach jam, or some brown sugar & cinn & nutmeg, close up the puff pastry pinching the seams closed. You can make it look like a bag by pleating the top & putting a piece of pastry like a rope around it or make a bow, etc. and if you eat eggs, you can beat an egg with a little water & brush on the "bag"
Then just bake at the temp {usually 400 degrees} suggested on the pastry box for about 15 mins or until a pretty golden brown; served with a salad this makes a complete meal!

I had a roommate last year that put a little Brie and diced apples in a flattened chicken breat, then rolled them up and baked them. It was fantastic with some shepherd's bread and glazed carrots.

I prefer my brie either with a baguette and things like thinly sliced french ham, pepper salami, sopresatta, or in scrambled eggs with sliced green onion and mushrooms!
