Well, you must be a pretty new "chef" if you don't know that avocado turns brown (like a lot of other fruits) because of oxidation (exposure to air). Use lemon or lime juice squeezed on top, and keep it covered with plastic wrap, with the plastic touching the surface of the guacamole, until you are ready to serve it.

It's getting too much air. Use a little lemon or lime juice in it, and then when you put it in a container, press down saran wrap directly on the surface of it and up the sides. Should stay fresh a couple extra days.

lemon or lime juice keeps the nice green tint of the avoacodo's burstin with color. i think it protects the avocadoes from oxidizing so oxygen can't brown the avoacado. these juices make guacamole taste tangy, but its yummy

I was going to say lemon juice...but I I think Lime juice would taste better. Not sure if it has the same properties of brown prevention. Maybe you could experiment on apple slices and see. Do one plate of apple slices...w/ no juice. One plate w/ lemon juice and one plate w/ lime juice. If it doesn't turn brown...I would recommend the flavor of lime juice...it goes better w/ quacamole dip.

I think I have heard of putting lemon juice in it to keep it green. If all else fails, will a little bit of green food coloring work?

a mexican friend of mine leaves the pit of the avocado in the guacamole until it is served. It keeps the green color perfect.
