2 tb Corn Oil
1 Onion, finely chopped
1/2 Green Pepper, chopped
3 Garlic Cloves, crushed
1/2 c Chopped Canned Tomatoes
1 Fresh Green Chili, chopped
1/2 ts Chili Powder
1/2 ts Paprika
1 cn Refried Beans (13 oz.)
5 tb Water
2 c Tortilla Chips
1/4 ts Ground Cumin
1 1/2 c Grated Cheddar Cheese
Paprika to garnish

Heat oil in a skillet, add the onion, green pepper, and garlic, and cook gently,
stirring occasionally, for 5 minutes or until soft but not browned.

Add the tomatoes and chili and cook over medium heat for 5 minutes, or until
most of the liquid has evaporated.

Stir in the chili powder and paprika and cook for 3 minutes, then add the
refried beans, breaking them up with a fork. Add the measured water and cook,
stirring occasionally, for 8-10 minutes, until the mixture thickens.

Spoon the beans into the middle of a baking dish, arrange the tortilla chips
around the edge and sprinkle with cumin. Sprinkle the cheese over the beans and
tortilla chips.

Bake at 400 degrees for 15-20 minutes, until the cheese has melted. Sprinkle the
paprika for garnish in a lattice pattern on top and serve immediately .

Layer tortilla chips, beans, cheese, salsa. Place under broiler until
the cheese is melted and the beans are hot. Sprinkle on the rest of
the items, eat hearty. You can make your own tortilla chips by deep
frying corn tortillas.

Nachos
30 grams butter (around 2 tablespoons)
2 onions, finely chopped
2 cloves garlic, crushed or very finely chopped
1/2 teaspoon chilli powder
1 teaspoon paprika
1/2 teaspoon cummin
2 tomatoes chopped
1/2 cup water
1 can refried beans
2 tablespoons tomato paste
200 g packet of corn chips
1-1/2 cups grated cheese

1.Melt butter in frying pan and add onions,
garlic, chilli, paprika and cummin. Cook
for two to three minutes.

2.In a saucepan mix together tomatoes,
beans, tomato paste and water until it has
a soft, but not runny consistency. Cook
for about five minutes, then add the onion
mixture.

3.In a cooking pan or oven proof serving
plate put the corn chips and cover with
cheese. Cook in the oven so that the
cheese melts at 180C (375F) for fifteen
minutes.

4.Serve by spooning bean dip on corn
chips and garnishing with sour cream (or
yoghurt) and avocado dip.


NACHOS FRIJOLES

6 c. tortilla chips
2 c. shredded cheddar cheese
Red refried beans
1 med. tomato, finely chopped
2 tbsp. minced onion

In a shallow baking dish or on a heat-proof platter, spread tortilla chips in
overlapping layers. Sprinkle with cheese. Bake at 400 degrees for 5 minutes or
until cheese melts. Top with red refried beans; sprinkle with tomato and onion.
Makes 6-8 appetizer servings.

RED REFRIED BEANS:

Saute 1/2 pound ground beef and 1 cup finely chopped onion in 1 tablespoon oil.
Add 1 2/3 cups drained, cooked red beans and 1/2 cup water. Simmer, covered, 30
minutes or until beans are soft and can be readily mashed.
Mash with slotted spoon or potato masher. Season with 2 tablespoons taco sauce;
add salt to taste. Makes 2 cups.

TIP: To serve as main dish, prepare nacho frijoles on 4 oven-proof individual
plates. Divide ingredients equally on each plate. Makes 4 servings.

Pizza Nachos:

6 min 5 min prep
4 servings

2 ounces baked tortilla chips
1/2 cup jarred marinara sauce
1/2 teaspoon dried oregano
1/2 cup shredded part-skim mozzarella cheese
2 teaspoons grated parmesan cheese

1. Preheat broiler.
2. Arrange tortilla chips on baking sheet or pizza pan.
3. Drizzle with marinara sauce and sprinkle with oregano.
4. Top with cheeses.
5. Broil until chips just start to brown and cheese starts to melt,about 1 minute.

INGREDIENTS
2 cloves garlic, crushed
6 green onions, sliced, white parts and tops separated
3 tablespoons canola oil
1 shredded, cooked, whole chicken breast
salt and pepper to taste
1 cup salsa
1/2 (12 ounce) package tortilla chips
1 (8 ounce) package shredded Cheddar/Monterey Jack cheese blend
1/2 large tomato, diced
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C).
In a 12 inch skillet over medium heat, cook and stir the garlic and white parts of the green onions in canola oil until tender. Mix in shredded chicken, salt and pepper. Toss until well coated with oil. Stir in the salsa.
Arrange tortilla chips on a large baking sheet. Spoon the chicken mixture over tortilla chips. Top with Cheddar/Monterey Jack cheese blend and tomato. Bake in the preheated oven 10 minutes, or until cheese has melted. Remove from heat and sprinkle with green onion tops before serving.
