French Toast which is bread dipped/covered in egg and cinnamon batter) then fried along with breakfast sausages and fried eggs

Go to all recipes.com and find a recipe for a breakfast casserole. These are really good, usually have hashbrowns, cheese, milk and sausage baked up. Yum.
You can also do a breakfast tortilla bar with warm tortillas, eggs, sausage, ham, different veggies, sour cream, salsa and what not to choose from.

My husband is a big fan of a country style breakfast. Biscuts with country sausage gravy. :) Get a couple of those refrigerated biscuts (they come in 4 packs usually) and a pack of country gravy with sausage. Make some breakfast sausage, hashbrowns (i buy the frozen packs and season it with seasoned salt an pepper), and usually oranges or some sort of fruit on the side. The whole thing will take you under 20 minutes to make.

Ingredients
1 box of frozen hash brown potatoes, can be patties,
12 - 14 eggs
1/2 cup water
4 oz. can of diced Chile Ortega,
1 1/2 cups of mild cheddar cheese, shredded
salt and pepper to taste

Lightly spray a 9 x 13 baking dish with Pam. Add hash browns (I used patties and covered the bottom of the dish) and sprinkle with salt and pepper.
The hash browns I used didn't have any seasoning so if you use hash browns with seasonings you probably won't need to add any of your own.
If you are going to add cooked sausage or bacon, place it on top of the potatoes.
Add 1/2 of both of the cheeses and Chiles. Sprinkle on top.
In a separate bowl mix the eggs, water and 1/2 of the Chiles with a wire whisk. Pour over the potatoes and top with the rest of the cheese.
Bake at 350 degrees for 45 - 55 minutes. Check the center for doneness by inserting a knife.
Serve with salsa and tortillas.
Another option would be to heat flour tortillas on a skillet and add a spoonful or two to a tortilla and roll it up.

Mom made this with left over potato's
she pealed jacket potato's ( just potato's cooked with skins on the night before )
peal & cut them in small pieces ,melt butter in large skillet add potato's lots of eggs & chunks of torn up bread . fry till done . salt & peper to taiste .
some people satee onions & pepers in butter first then add the rest of the ingredeince & more butter .
Can use hot pepers if you like .
We loved it a lot .

try something besides mexican, change it up! have belgium waffles with strawberries sprinkled with a little liquid chocolate on the top. great start to a weekend!
